We went to Waizen in Ferrara a few nights ago and, from a culinary and service standpoint, the experience was impeccable.
The food and beers: Truly excellent. The dishes are plentiful, flavorful, and perfect to pair with the wide selection of beers (Waizen beers are a guarantee). Whether you order a burger or a typical beer hall dish, you'll be thrilled.
The service: The staff is young and incredibly courteous. Despite the place being packed, the staff were quick, attentive, and always smiling. A 10 for customer service.
The only downside: We dined on the restaurant's veranda, and unfortunately, the noise level was really high. It was so loud that we struggled to hear or talk to the people at our table, almost forcing us to shout.
My advice: If you're looking for a quiet evening to chat, I highly recommend booking outdoor tables during the warmer months.
I'll definitely be back for the excellent food and friendly staff, but maybe even outside!

Carefully prepared and very tasty dishes.
Service is really slow, with very few table staff (at least the night I went).
Price is reasonable.

10/06/2026: A traditional restaurant with excellent service. We felt at home. Incredible and refined dishes. I recommend the Bolognese/ragù. The pumpkin sorbet with balsamic vinegar was an interesting experience, but personally I loved the panna cotta.
09/06/2026: Excellent traditional Bolognese restaurant and one of my favorite meals in Bologna. The Gramignone verde al ragù di salsiccia was rich, flavorful, and perfectly cooked, while the Scaloppina alla Petroniana was outstanding and a fantastic introduction to one of the city’s classic dishes.
The wine recommendation paired beautifully with the meal, the service was attentive and professional, and the atmosphere felt authentic without being pretentious.
If you are looking for traditional Bolognese cuisine, this is a place I would highly recommend.

26/03/2026: This restaurant has undoubtedly been one of the most talked-about in Parma in recent years (in a good way, of course), and a few weeks ago I understood why.
The key words I found, from the location to the menu, were: simplicity and authenticity.
The location is very intimate (there are only a few seats inside, so reservations are required well in advance), with an intimate, elegant atmosphere and soft lighting. It's ideal for a quiet dinner.
The wait staff was truly kind, ready to offer advice and pamper you from the moment you sit down until the end of the meal.
The menu is truly refined and focused on the pure exaltation of the finest ingredients. What struck me most is that there are no rules, no classifications or labels such as appetizer, first course, or second course; you choose the order in which you prefer to dine (in my case, I started with the second course and then continued with the first). I also really appreciated the simplicity of their approach, as if to convey that not many words are needed to describe their dishes; you have to try them.
I had the quail (cooked perfectly, it's impossible not to mop up the sauce) and the spaghetti alla chitarra with game sauce (also excellent, the pasta was sublime, and the game was delicious). To finish, a banana dessert with guarana, if I'm not mistaken.
Another thing I appreciated, and one I'd personally never seen, was that for some dishes there is a "standard" version and a "small" version (smaller in both portion and price). Personally, I really appreciated this because the portions are generally generous, allowing you to try multiple dishes without feeling too heavy.
What I appreciated most was being surprised from start to finish; nothing is taken for granted, and it makes you realize how much thought goes into every single dish.
Prices are absolutely in line with many other restaurants in Parma, but still completely justified given the work behind this wonderful project.
We'll be back!

07/05/2026: In response: First of all, I wanted to abstain from commenting because, as you point out, I had to communicate my intolerance. You should write (by law) all the ingredients on that blackboard called the “menu” (even the Chinese know it by now) that was placed on a chair, especially if there is no trace of “tradition” (Gianna’s Bolognese cutlet, I don’t expect a brick of cream on top, it was an insult to Bologna and to Gianna. Write what you put on top since I see that I’m not the only one among the reviews who didn’t imagine this way of understanding a Bolognese cutlet). In crescentine I have always known/seen/eaten/made with dough where there was little presence of milk (on 1/2 kg of flour 140ml of milk, are you really saying/equating the presence of lactose in crescentine with that cutlet where there was almost 100ml of cream on top! Slightly different proportions and I ate 2 crescentine, not 10, luckily at this point) not as you say that you also put cream there, as SHE specified. Then thanks for the clarification at the table, I advise you for the next customers to connect "the facial expression" to what you say if you call it "kindness" to me, it only seemed arrogance and "annoyance" for the return of the dish, where due to your carelessness this happened. But I did well, I'm sorry to say, since those like me who had that dish had a stomach ache all night without even having an intolerance, but a normal stomach, so much cream is bad for anyone! Anyway, we've all learned our lesson, especially about where not to return.
Edit: The mistake is not writing the ingredients on each dish or using cream to hide a lack of ability to create "new dishes." When you go to a traditional trattoria, you expect that, not what we all saw and ate yesterday. When one of us asked for a regular grilled steak, you couldn't even make that, I mean... come on... and not having a real menu is truly sad and risks these problems. Then, oh, my partner worked at the Abbazia di Monteveglio restaurant, perhaps he wants to discredit even such a twenty-year-old excellence, or perhaps he thinks he's talking to a fool who doesn't know what good Emilian cuisine is?! And I'm already sorry he continues with his arrogance, I'll do the same, but there's nothing "della Gianna" about it. Being local, I remember how it was eaten, and it wasn't what I saw yesterday. Out of 10 dishes, 5 had cream. Let's leave aside the tagliatelle with friggione, to season the tigelle and crescentine, very little for the two baskets ordered. Looking at the other reviews, some people like your food, good for you, but I repeat, don't think I was the only one who didn't appreciate it yesterday, on the contrary. What I recognize is the right balance between quality and price, both of which are in fact low. Your staff was very kind, it was your way of addressing the problem and why 1 star. Eating badly happens, but I can't stand this rudeness. A little self-criticism doesn't hurt.
Oh, we were the largest table yesterday, and then there are people who eat fried cockroaches in China just to try it, so there are also those who love cream and will eat anything. If you want, we can continue the back-and-forth like this. Have a good day, good work, and I wish you the best.

21/05/2026: It's now a true institution. It's been under the same management for many years, and they're always fantastic. At lunchtime, you can grab a quick, tasty break without long waits. The piadina is truly delicious, and the value for money is excellent. I've also stopped in at night, and the staff are incredibly friendly. I'd say it's definitely worth a try.

15/04/2026: As a Brazilian, I'd say it's a real churrascaria. I arrive right away, they bring delicious queijo bread, polenta, and even delicious garlic bread. The buffet is plentiful, the meat is tender and a joy to the palate. And the finish: hot pineapple, which I love, and scamorza cheese with jam is truly amazing. I recommend not eating too much so you can savor everything. The price is very fair for everything I ate.
