This restaurant has undoubtedly been one of the most talked-about in Parma in recent years (in a good way, of course), and a few weeks ago I understood why.
The key words I found, from the location to the menu, were: simplicity and authenticity.
The location is very intimate (there are only a few seats inside, so reservations are required well in advance), with an intimate, elegant atmosphere and soft lighting. It's ideal for a quiet dinner.
The wait staff was truly kind, ready to offer advice and pamper you from the moment you sit down until the end of the meal.
The menu is truly refined and focused on the pure exaltation of the finest ingredients. What struck me most is that there are no rules, no classifications or labels such as appetizer, first course, or second course; you choose the order in which you prefer to dine (in my case, I started with the second course and then continued with the first). I also really appreciated the simplicity of their approach, as if to convey that not many words are needed to describe their dishes; you have to try them.
I had the quail (cooked perfectly, it's impossible not to mop up the sauce) and the spaghetti alla chitarra with game sauce (also excellent, the pasta was sublime, and the game was delicious). To finish, a banana dessert with guarana, if I'm not mistaken.
Another thing I appreciated, and one I'd personally never seen, was that for some dishes there is a "standard" version and a "small" version (smaller in both portion and price). Personally, I really appreciated this because the portions are generally generous, allowing you to try multiple dishes without feeling too heavy.
What I appreciated most was being surprised from start to finish; nothing is taken for granted, and it makes you realize how much thought goes into every single dish.
Prices are absolutely in line with many other restaurants in Parma, but still completely justified given the work behind this wonderful project.
We'll be back!

In our opinion, one of the best restaurants in Parma. Extreme care is taken in selecting and pairing ingredients. Excellent service, with the owner and staff highly knowledgeable and committed to ensuring customer satisfaction. Highly recommended. Bravo!

A welcoming atmosphere that successfully blends tradition and modernity.
The owner's friendliness and kindness are an integral part of the culinary experience.
An excellent selection of wines, and a food that combines expert experimentation with Parma's tradition, revisiting the great classics without distorting them, yet making them new, unique, and simply unforgettable.
A treat for more than just the palate!
Kudos to the attention paid to allergens and intolerances, which is not a given.
In our opinion, a must-visit if you're passing through Parma, even for just a few hours like we were.

Second time at Cortex, what can I say?
Everything was perfect: supreme food, a totally welcoming atmosphere, and impeccable service.
I love Rossella, who I trust with every choice, regardless of the wine list, which is extensive and decidedly satisfying.
Perfect dinners and an elegant yet convivial atmosphere.

Whenever I read the menu descriptions, I'm always curious how they will execute the dish with those ingredients—and they nail it every time! The food is amazingly good, and I can't wait to come back.

Characterful atmosphere, but tables very close together. Friendly staff and delicious, unusual food. It's not traditional cuisine, but each dish features unique combinations and ingredients.

Very welcoming place and excellent service. I really enjoyed the cuisine, but it's definitely a unique genre: the dishes have sophisticated flavors, which I personally really appreciated. I highly recommend trying the lamb.
