02/10/2025: Hands down, the best delicatessen in Piacenza. It's rare to meet a true professional who pours all their love and knowledge into what they do, yet remains humble. Anyone who enters Il Salumaio Valla can see the owner's passion: we found ourselves spellbound listening to his stories about the curing process of the cured meats, while tasting them accompanied by a special wine (also produced by him), halfway between still and sparkling, sweet just like the wine itself. Personally, I would walk the entire length of Via Roma every day, even though it's no longer the best area of ​​the city, just to return to that little shop brimming with history, studded with price lists as they once were. It's a leap into the past but also a step into the future, thanks to the gourmet selection it offers. I can't wait to return, even if it's just to try the famous gourmet chocolate with pancetta, or to experience the banquet they host on the first Sunday of the month, with everything freshly prepared. A place that will stay in your heart and honors Piacenza's traditions. Highly recommended!

The rooms are clean and tidy, and the staff is always friendly, so much so that even though my mother can't eat certain dishes, they prepare meals she can eat without any fuss, and every year they both return home happy. The property is located 150 meters from their partner beach.

The course on teas and their applications in mixology is highly stimulating and innovative, especially the new HOMEMADE course, which allows you to learn in the classroom and test preparation techniques and the various resulting products. The choice of offering both in-person and online training is excellent, allowing us to meet all the needs of our students.

03/12/2025: I just attended the American Bar XL course. I'm a lawyer, and I indulged in this passionate perspective on the subject, balancing flavors and tastes. I was impressed by the high level of knowledge in product science, the thorough knowledge of industry legislation, and the ability to teach the techniques for making homemade syrups—delicious syrups that make drinks tasty, fresh, and uniquely flavorful. The instructors promptly planned a variety of real-world scenarios to allow the students to express their skills by putting the knowledge they had acquired into practice. We mixed cocktails using a variety of techniques, measuring ingredients and choosing the ideal glasses, until, on the final day, we achieved the perfect balance between liquid and ice. Truly an art. Difficult to teach, but not for Drink Factory. If I had a child with this passion, I wouldn't hesitate to enroll them in the course. All the instructors deserve the highest praise for leaving an indelible mark on the open minds of every young person who wants to launch and further their career.
