13/09/2025: Easily 5 stars. Nothing to dislike, everything to love. The best meal we had in Puglia. The best service we had in Puglia. The best conversation we had in Puglia. If you're looking at the Michelin guide and debating where to dine while in Puglia, make sure Quintessenza is on your list. Candidly, we didn't have great luck with a couple of Michelin recommendations in other cities earlier in our trip. However, Quintessenza helped us end our trip on a high note. We did the Classici tasting menu, and not one bite disappointed. Think of it this way, if you want to experience the classic flavors of Puglia using the highest quality ingredients in an accessible atmosphere presented through a fine dining lens via a highly skilled modern interpretation backed by knowledgeable and supremely friendly service, then Quintessenza is an easy choice for you. Here's your dilemma though. If you eat here early in your trip, nothing else may compare, and if you eat here late in your trip, you'll likely forget all the other places you ate.

08/09/2025: Quaint restaurant, perfect food, and changes were no problem. From our table, we could see into the kitchen; the work was clean and professional. The chef came to explain the food to us, and the server was very accommodating! The raw seafood was very fresh!

07/09/2025: We had an amazing experience at this restaurant. We ordered the octopus tentacles and the fish ravioli with shrimp sauce, followed by the Tiramisu , and every dish was outstanding. The food was fresh, flavorful, and beautifully prepared. What really stood out, though, was the atmosphere and the people. Our server was incredibly friendly, even though we didn’t share a language, his smiles and hand gestures made everything clear and welcoming. The chef, who spoke fluent English, checked in with us often, shared great recommendations, and even offered us a digestive wine after our meal. What impressed us most was his honesty. In most restaurants, you feel pressured to order more. When I asked about adding a third dish, he suggested we first try the two we had ordered and then see if we were still hungry. That kind of genuine care, making sure we enjoyed our meal rather than pushing for more, is what makes this place truly special. P.S. Don’t miss their pistachio liqueur. it's unforgettable! P.S.S. The price is on a higher side but truly worth it!

16/09/2025: Quick and tasty meals, home-cooked food, feel like you're at home, except you get to watch others cook. Very basic, you can eat in or take out, and the owners are very friendly.

21/09/2025: New Year's Eve and still more than good. We've been here regularly this year too, and we were treated like good friends. The service was perfect, and the food and drinks were outstanding. Here begins last year's review: We've been here twice now, and each time the service was perfect down to the last detail (even an extra bowl for the olive pits with our drinks), the Il Pugliese DOC and Bruschetta Italia were plentiful, delicious, and addictive, and the drinks and wines were highly recommended. The location at the gateway to the old town has a great atmosphere. Each time, it's been hard to leave. We'll definitely stop here next time we're in Peschici.

Prices are average for the quality of the ingredients and the craftsmanship, and the warm homemade bread is worthy of praise. The only flaw is the wine list, which is too extensive and difficult to manage, and the portions of the first courses could be a bit more generous. Overall, a place worth trying, with friendly, polite, very knowledgeable, and professional staff. Interesting non-alcoholic cocktails to try, and a very interesting watermelon carpaccio. 18/08/2025: This restaurant is run by a farm that grows spelt, so many dishes are made with spelt flour. On our evening, the menu was listed verbally, perhaps because it changes constantly. In short, if you want to choose from a wide range of menu options, this isn't the place for you. If, however, you like rustic-style restaurants and food, this is the perfect place. Highly recommended, and if you use TheFork, you get a 20% discount.

17/08/2025: We came here because we arrived in Putignano in the afternoon and there weren't many other restaurants open, but we were so glad we did. The service was very friendly and helpful. The restaurant is known for its meals made with products from its own farm. The menu is based on what's still available. We had mutton stew, grilled pork, and pasta. All delicious. Accompanied by a delicious Primitivo (from a mug), also homemade. We chose four different desserts, all equally delicious. Highly recommended for a tasty and different meal.

11/10/2025: Chapter 1 ​This morning I woke up early, at 12:00, with a sadness in my heart, wounded by the discovery that my girlfriend's name isn't Anna Giulia, but MARIOOO... 🤔🤔 I immediately took a car with driver to Polignano. ​Chapter 2 ​Walking through the alleys of this beautiful seaside village, among couples in love and elderly people with Parkinson's, I found myself in a "long non-place"... My prostate problem led me to this magical place with an incredible restroom. 😍 ​Chapter 3 ​After the moment of ecstasy, I found myself sitting at a table in this delightful little place: "Mint ❤️". ​Chapter 4 ​The first bottle of bubbles. ​Chapter 5 ​The restroom. ​Chapter 6 ​The second bottle of bubbles. Chapter 7 I ate some incredible food... everything was delicious. ❤️❤️❤️❤️ Chapter 8 I asked for the owner's phone number. Chapter 9 I went out with Pako... who I don't know. 😅😅 He claims to be my missing son. But that's another story. The end.

11/10/2025: If you're in Polignano and want to eat and drink well, in a welcoming, convivial atmosphere that makes you feel suspended in time, then you absolutely must try Fabrizio's cuisine at Mint. Liù is a true hostess, welcoming and pampering you as if you were her favorite guest! Thank you for the delicious experience! See you next time! PS. The cacio e pepe cheesecake, the octopus with Fe, and the dark chocolate dessert were WORLDWIDE!

30/09/2025: What an outstanding restaurant. Not what I expected in Mola Di Bari, would expect this type of restaurant in a large city and I believe it would be very successful. We didn’t really know what to expect when we visited as we hadn’t looked at the menu, we were VERY VERY pleasantly surprised by the menu, the service, the setting and everything about our experience. Our only disappointment is that we only discovered Parla Paino on the Sunday before we returned home. We would have visited on the Monday too, but they were closed. I couldn’t recommend this place highly enough, it was truly amazing! If Parla Piano was in a big city, I would expect to pay €200-300 for the quality of this setting, service and food! I’ve paid a lot more than that in London and the food has been nowhere near as good as Parla Piano! Please keep up the good work.
