The location is simply stunning, in the heart of beautiful Trani. The veranda overlooking the castle is a gem worth the visit alone.
Saverio, one of the hosts, was exceptional: he welcomed us with warmth and professionalism, and at the end of the meal, he kindly offered to take us on a tour of the restaurant. We had the pleasure of discovering the upper floor and the terrace, which I already imagine would be extraordinary on a summer evening and which will be the perfect setting for the second tasting menu, which we can't wait to try.
Chef Stefano Di Gennaro's cuisine is a true celebration of Puglia and Trani traditions: local ingredients treated with respect, technique, and identity. It was a privilege to meet him in person and congratulate him directly.
We will definitely be back.

What started very strong ended up being a mediocre dinner. Not sure that Michelin got this one right… sea urchin pasta tasted overly fishy- my sea bass was burnt and overcooked and served with greens which tasted frozen. The deserts had an overly fragrance taste.

Last night we decided to come to this restaurant to try the classic tasting menu.
High expectations, which were met with discretion.
The menu was varied but with subtle flavors, which nevertheless left me with some hesitation.
Five-star service, attentive to detail, but perhaps I would have appreciated a more relaxed approach, especially when dealing with young customers. I believe a smile is always the key to great success.
The highlight is undoubtedly the tortellino with ricotta, red shrimp, and bisque. Overall, the place is beautiful, the staff are knowledgeable, but given the final bill, perhaps they should be more selective with their tastes, in my opinion.
Very interesting wine, with a wide variety of labels, including natural and quality wines. There's a cellar downstairs that you can visit.
In any case, the flavors are delicate, and we definitely recommend trying it if you're in Trani.

Returning to Quintessenza di Trani for the fourth time is a reaffirmation of a gastronomic love affair that has lasted for years.
The Michelin star shining on this establishment is not a static achievement, but a vibrant energy that can be felt in every detail.
We once again chose the classic tasting menu, a true journey back in time to the discoveries that made this restaurant famous. What is deeply striking is the balance: the raw materials are of extraordinary quality, treated with the respect due to what the land and sea offer.
The chef's remarkable technique then manages to enhance this delicacy, without ever being aggressive.
The flavors are rounded, full, a sensory feast where even the most daring element blends with impeccable harmony.
The experience was further enhanced by excellent table service and an excellent champagne that accompanied the courses, further elevating the experience.
In such a high-end setting, where beauty and craftsmanship reign supreme, the only small detail we feel is strongly anachronistic is the cost of bread and cover charge. In a restaurant of this caliber, we believe that including this cost in the menu price would make the experience even more fluid and modern, eliminating a formality that doesn't fit with the restaurant's broad international scope and harks back to a time when restaurants had to supplement meager revenues with every possible artifice.
In any case, when it's time to leave, the bill is absolutely proportionate and commensurate with the excellent quality of what we've tasted. You leave Quintessenza with the now rare feeling of total satisfaction; a bill that seems "light" precisely because the spirit and palate have been nourished with rare mastery.
In short, an essential stop for anyone seeking the true essence of signature cuisine in Puglia.

Your first time at a Michelin-starred restaurant is unforgettable. And indeed, it was a long-awaited, sought-after experience, worth experiencing and sharing as much as possible. It's impossible not to give this experience five stars, for several reasons. The first is the attention and care shown to everything that surrounds you from the moment you enter this splendid stone structure located opposite Trani Castle. This alone would merit my five-star review. The service is meticulously meticulous, not excessive, but very important. The menu and its courses are therefore difficult to describe because they really must be experienced, savored, and understood. There's a blend of Puglian tradition, present throughout the entire gastronomic journey, and gourmet innovation. All the pairings are very balanced. Personally, I really enjoyed, in addition to the homemade bread, the risotto with herring and mackerel with caviar. It's flavorful and excellently balanced. The wine list is very impressive, reflecting a high-quality cellar. Of course, we're in a Michelin-starred restaurant, so the prices are reasonable, but ultimately, you have to remember that you're enjoying a taste experience, not just a simple meal. Congratulations.
