Lo chef Mirko , un vero personaggio, propone un menù con diverse varianti. Qui si può accarezzare la tradizione con la zuppa o la trippa alla volterrana , vere leccornie.I fantastici taglieri di affettati e formaggi, i pici in tutte le salse.. fino ad arrivare alla regina incontrastata ...la carne ... tagliate ,filetti ,con funghi, tartufo , scaglie di grana e così via ... pizza ....e anche una cucina attenta anche alla celiachia, anche il glutenfree è da elogiare...Ma veniamo al dunque...oggi io e la mia compagna siamo partiti apposta per una vera abbuffata culinaria di pesce e riso e verdura ...in poche parole una magica paella.... che dire prima ci ha rapito e stregato gli occhi poi ci ha fatto sognare con il gusto ...non possiamo che ringraziare lo chef e tutto il suo magnifico staff per questo viaggio culinario che da valencia, ci ha fatto toccare Madrid con un dito , volare sulla rambla a Barcellona ,per riportarci infine a Volterra veramente appagati e soddisfatti ...grazie di cuore ...consiglio a voi tutti di provare il Don Beta...ne vale la pena ...

The fantastic platters of cold cuts and cheeses, pici in all sauces... until you get to the undisputed queen... meat... slices, fillets, with mushrooms, truffles, flakes of parmesan and so on... pizza... and also a cuisine that is attentive to celiac disease, even gluten-free is to be praised... But let's get to the point... today my partner and I set off on purpose for a real culinary binge of fish and rice and vegetables... in a few words a magical paella... what can I say, first it kidnapped us and bewitched our eyes then it made us dream with the taste... we can only thank the chef and all his magnificent staff for this culinary journey that from Valencia, made us touch Madrid with a finger, fly on the Rambla in Barcelona, ​​to finally bring us back to Volterra truly satisfied and contented... thank you from the bottom of my heart... 16/03/2025: Abbiamo scelto questo ristorante per la sua splendida posizione immersa nel verde, ma purtroppo il cibo è stato deludente. L'antipasto di terra era essenziale: qualche fetta di prosciutto, un po' di salsiccia secca e una sola fetta di formaggio, servita con evidente risparmio. La vera nota dolente è stata la pasta alle vongole: scotta, insapore e servita in un brodo annacquato... Il locale era abbastanza affollato e, forse per la fretta di servire tutti, la qualità dei piatti ne ha risentito. Peccato!

06/03/2025: A wellness oasis It's beautifully furnished and very clean and well-maintained. The food is excellent. The spa area is a dream, and the gym has everything you need for a vacation. What really impressed us, though, was the entire staff. Their friendliness, helpfulness, and attentiveness are impressive. Where do you find such employees? I would give the hotel 6 stars if I could.

24/02/2025: 😊‼️exceptional I've been to many hotels around the world, but this is probably one of the best, if not the best. The only thing that should be changed is adding a glass door that closes off the shower. Since it's open to the room, it's cool to shower in February, even though the room is well heated. Beyond that, there are no words to describe the courtesy of the service, generosity, cleanliness, comfort and availability, including the high level of maintenance. The architecture and interior design are perfect, including the materials used. Breakfast and dinner are wonderful, varied and very tasty. Great and spacious gym. Heated and fun pool and children's pool. Excellent spa treatments, a variety of saunas. Unplanned hospitality is second to none, including alcohol gel kits and hand cream in every corner of the public areas.

It's also annoying to be denied a table for three if the third person has gone out to answer the phone. There are better places, less pretentious and more friendly.
