16/10/2024: We wanted to stay for two nights...then instead we stayed for four days. Optimal location for our needs, absolute tranquility in a prestigious structure finished with taste and capacity! Exceptional cuisine both for breakfast desserts, the fantastic ricotta from Podolica cows, honey and artisanal jams. Dinner with typical appetizers, hand-pulled first courses and exquisite meats accompanied by varied side dishes, and excellent primitivo. Thanks for everything, especially to Clara for the availability and professionalism with which she welcomed us! We will definitely be back.

18/08/2024: We spent some days around mid-August, relaxing days of pleasant culinary pampering together with my family and friends with children of different age groups. The place away from the noise of everyday life is extremely pleasant, comfortable and relaxing. Accommodation structure where the classic stay is linked to exclusive services such as the swimming pool. High quality farmhouse where every detail is taken care of to the maximum to meet the needs of customers. Starting from breakfast there was a vast choice from savory (quality products produced by them) and sweet with very different cakes and seasonal fruit, the lunch proposed for Ferragosto was excellent and plentiful at a super low price the children/teenagers were satisfied with of the off-menu dishes, the following days the dishes offered for lunch were deliciously prepared by a special "Woman", with excellent attention to detail and delicious ingredients. Mrs. Clara is a welcoming woman, all the staff are kind and helpful.

22/09/2024: Personale preparato , prodotti freschi, dal dolce al salato tutto di ottima qualità , io personalmente ho apprezzato parecchio il dolce chiamato "tette della monaca" veramente buoni ma anche per il salato c'è una vasta quantità che non sai cosa scegliere, tutto buono. Per il personale lo trovo preparato e disponibile a dare consigli , un posto dove sei in famiglia , da tornare assolutamente e per chi arriva ad Irsina consiglio di andare vivamente

24/11/2024: Nice quiet place to have a beer and eat something. Good quality of food, very tasty dishes chosen on the menu and cheap prices. I recommend it if you are looking for a couple of beers and some hot food.

27/06/2024: As a specialty I recommend the "Nuns' tits". This dessert produced by Vignola has a very delicate taste. It turns out that it's wonderful even at the end of the meal. The staff is very patient and courteous. Clean and essential furnishings. Parking spaces are adjacent to the pastry shop.

22/12/2024: went on 21 december (saturday) around 8pm good and high quality food. there was a lot of attention to detail for the dishes. the interior of the restaurant was lovely. the server was a sommelier, and the glass of red wine we had was good

30/08/2024: My favorite bakery in Genzano. All delicious and with an excellent quality/price ratio, also considering that they use quality local products (such as mozzarella): bread (the packaged version is also excellent), focaccia, panzerotti and taralli (the ones with onion and raisins are worth mentioning). Applause also goes to Michele, who serves behind the counter, and is always kind. Keep it up!

22/08/2024: Everything of an exceptional standard. 3 times in 3 years. I hope to return. Quality raw materials, imperial raw materials with excellent seafood experience. Sommelier, attentive, friendly and prepared. His colleague is a little less so.

21/08/2024: Excellent restaurant that courageously emerges from a chorus that always and only navigates between tradition (little) and tourism, without thinking too much about the quality of the dish and offering something new, different. A beautiful experience, a restaurant with attention to detail and the possibility of drinking excellent drinks as well as wines. There are small details that can be improved to adjust the aim a little but in the end they are of little importance and are not strictly necessary. All at one. acceptable price for the quality of both food and drink. Essenza is a virtuous initiative, with the right courage, to which I wish luck in the years to come. We will be back.

22/12/2024: Excellent location, well-kept and well-furnished interiors, fast service, attentive to customer needs, and professional (we were expecting friends and while we were waiting they offered us a good prosecco, a sign of good generosity and excellent hospitality). Quality food and raw materials of a certain level, pizzas made to perfection and beautiful large ones. We will definitely be back!

30/08/2024: Hostel located in the city of Matera. The facilities are in perfect condition, the rooms have everything you need to have a great stay. The quality of the attention of the owner and her son stood out, they were very helpful during our stay.

07/01/2025: Small and welcoming place, staff, friendly and kind! The starters were good, the meatballs were the only thing we didn't like as they were cold and the sauce was frozen! The starters were tasty!

26/01/2024: Eravamo a Matera per una passeggiata e cercavamo un locale che trattasse vini naturali. Siamo capitati da Fermento quasi per caso. Il menu è molto interessante e nulla è banale: il tagliere di salumi e formaggi è sicuramente frutto di un'attenta ricerca di prodotti particolari e praticamente introvabili nelle nostre zone (due prodotti che mi hanno lasciato a bocca aperta: Montebore e Morbier. Due prodotti letteralmente sconosciuti da noi). La tartare di ottima qualità condita e accompagnata da una maionese preparata da loro che non copriva asssolutamente l'ottimo sapore della carne. Abbiamo chiacchierato lungamente dopo cena con i padroni di casa promettendo loro che torneremo in primavera magari a pranzo per una degustazione più completa del loro menu perchè fanno un lavoro eccellente che merita attenzione. Buona la selezione di vini naturali. A presto!

07/01/2024: Ottimo posto per mangiare e bere bene. Eravamo in 3 e abbiamo preso un antipasto centrale dello chef e un primo a testa. Selezione incredibile di vini, abbiamo preso una bottiglia di vino naturale. Location incredibile all'interno di un "sasso".
