Unexpected portions of exquisite roast caciocavallo cheese, roasted to perfection, without drying it out, melting the inside while still leaving the outside tender. The beef fillet in Tintilla wine was a superb experience: perfectly cooked rare, with a strong wine reduction for at least 300-400 grams of excellent quality meat. A vast and comprehensive menu for every craving. Truly satisfied, highly recommended.

02/03/2026: I've been curious to try it for a few months, and I can say we were impressed. The staff were friendly and welcoming, ready to answer any questions. The meat selection was very wide and delicious. The first courses were exceptional, as were the side dishes. The starter was also excellent. The restaurant is small and intimate, so I recommend booking if you don't want to be left stranded. We'll definitely be back.

29/01/2026: Drawn by so many positive reviews, we wanted to try this place. My opinion isn't negative because I understand the hard work and sacrifice behind this establishment. I'll just say that some things could be improved. As for the cured meats, I've had better in the area, and even the wine glasses could use more attention, especially when you're drinking a certain quality. And even more so if I see a Sommelier certificate on the wall. I really appreciated the kindness and friendliness of the owners.

01/03/2026: I'm a restaurant professional, and I pay particular attention to certain details that, in my opinion, truly make the difference. I'll start with the positives: the meat was excellent quality, well-cooked, and perfectly presented. The location is very pleasant and well-maintained, and I particularly appreciated the change of cutlery after each course and the cloth napkins, details that demonstrate customer care. The wait staff was welcoming, friendly, and professional, contributing to an overall pleasant experience. Regarding the dishes, the only one that didn't fully convince me was the killer "Cortina": it lacked crunchiness, and despite being declared spicy on the menu, it didn't taste that way. A slight imbalance between expectations and the final result. The meat nigiri also deserve consideration: I would suggest paying particular attention to the preparation of the rice, which is the key element of the dish. In this case, I found it rather bland and slightly stringy, an aspect that inevitably affects the overall harmony. Finally, there's one aspect that unfortunately left me perplexed. With an open kitchen, the chef's behavior becomes an integral part of the customer experience. During service, seeing the chef vaping and smoking in front of the customers, as well as eating with his hands in full view, was unpleasant. I understand that there are moments of pause or tasting in the kitchen, but when choosing an open kitchen, it's crucial to maintain an impeccable image in every respect. With a little more attention to these details, the restaurant's quality could rise even further.

14/03/2026: An excellent experience at La Filanda in Manciano. We ordered the crispy egg pasta with zucchini fondue and fresh truffle and the Maremma prosciutto heart with Manciano-style schiacciata. Both were delicious, with quality ingredients and beautifully showcased flavors. For our first courses, the paccheri carbonara with Cinta Senese pork cheek, Tuscan pecorino cheese, and fresh truffle was rich and flavorful, while the pappardelle with Manciano-style wild boar ragù was truly excellent, with an authentic flavor. Careful cuisine, excellent ingredients, and a pleasant atmosphere. Recommended.
