20/09/2025: More than a dinner... it's a journey of expertly reinterpreted dishes that speak of the local area. We didn't try the menu but opted for the à la carte menu, and I must say we were very satisfied. Our least favorite was the dessert, but above all, the Sambucana sheep, the Pesio sturgeon, the spaghetti with Castelmagno cheese, the macaroni, and the pork with mushrooms were truly top-notch. The price, as we know, is high for a Michelin-starred restaurant, but it's definitely worth it. The service was prompt, never over the top, truly perfect. The restaurant has been beautifully renovated. We'll be back to try the menu.

08/09/2025: A magnificent place, although a little difficult to find (we didn't see a sign indicating the restaurant!). We were very well received (we had reservations), despite a rather large number of guests and a significant delay! The dishes were excellent (although the appetizer was a bit short on quantity!) The bill wasn't that high for a full meal + aperitif + coffee! A wonderful experience.

06/09/2025: We stayed at this hotel for six nights. There are several points to mention in this review. First, the beds are appalling. In a double room, we found a metal bedstead with a wooden plank over it. The slightest movement made an insane noise, making it difficult to sleep at night. Furthermore, having installed two single mattresses, they shifted during the night, often resulting in a person being sandwiched between them. The hotel website states that "all" rooms have a balcony/terrace, but this is not the case. The hotel does not have an elevator, so elderly people or those with mobility issues had great difficulty climbing the stairs to their rooms. There's little choice for breakfast, as it's not a buffet. Otherwise, you'd find an empty croissant per person (I think they made it themselves), a small piece of cake or tart they made (I think), and some toast with packaged jams of your choice. Then you can choose a drink from the bar (coffee, cappuccino, latte macchiato, etc.). There's no choice for a savory or healthier breakfast. The portions at lunch and dinner are very generous, with many good dishes, but for those staying at the hotel for several days, things get boring because the dishes are always the same (green tagliolini with mushrooms, braised meat that was offered every day for both lunch and dinner, cooked vegetables always peas with carrots, green beans, and sometimes potatoes, and so on, but always the same dishes). If you asked for a simple salad because you no longer wanted the same dishes, it wasn't available. Basically, there was no option to have any fresh vegetables (side dishes) or to order fruit (there wasn't even watermelon, no fruit at all). Being a property that claims to be pet-friendly, I would have expected at least a small dog area (fenced off) where you could maybe stay when you're not out and about with your dog (there is enough space in front of the hotel to offer such an area). Some finishing touches are definitely missing (hair dryer, hangers in the bathroom, a shower gel holder inside the shower stall). Some rooms don't even have a closet and have a simple A metal structure covered with a DIY-style plastic sheet. They don't even have a small table or desk to place small appliances. The hotel offers a beautiful view, and there are lovely trails nearby for walking through the woods. Given our experience with the rooms, I honestly don't know if we'd return, as we didn't sleep well due to the uncomfortable bed. It's a shame, because they could offer an excellent choice given their convenient location.

27/10/2025: Searching on the internet for lunch, we were inspired by the name and thought it was a place where the meat was a spectacle for many reasons but unfortunately we were disappointed!

25/11/2025: There's no place like Cavallo Bianco. Expertise, courtesy, and availability. The lunches are exceptional, both in terms of satisfaction and taste. The cuisine is varied, with traditional specialties. From raw meat to tagliatelle with porcini mushrooms, and the extraordinary gnocchi with Castelmagno cheese. A place that, if you know it, you'll surely return with great pleasure. Congratulations and Ad Maiora!

20/11/2025: Historic restaurant in the town center. An absolute must. Delicious food, fast and knowledgeable staff. Tried both for lunch (business menu excellent value) and dinner. Always a guarantee. The pizzas are a must-try, with a light and digestible dough. Highly recommended!

White truffle flavor/aroma on the agnolotti (declared 8-10g but I can't tell because the chef "ignored" the use of scales): not present. Dessert: nothing exceptional. In short, a mediocre meal. It all became clear to me when I saw some pots and pans for sale near the register. P.S. Look, the point isn't "deciding to put white truffle on the agnolotti." The point is knowing how to make them taste good, if you decide to serve them. You could have simply said no—a real chef does that, if a request doesn't meet his standards. But if you accept the order, serve it, charge for it, and then insult the customer, then the problem isn't my ignorance... but your presumption. And while we're talking about professionalism: when you declare "8-10 grams of white truffle," the scales aren't optional. Because if the measuring tool is "the chef's eye," then we're no longer talking about cooking, but about expensive improvisation. I haven't smelled truffle—neither on the nose nor on the palate—and that, in a dish from a restaurant that claims to be serious, should be enough of a reflection. I understand that it's easier for some to call an "ignorant customer" than to actually weigh what they're serving. But you see, that's the difference between a chef and an improviser: one accepts the comparison, the other justifies himself with insults. Besides, a restaurant that sells pans at the entrance is self-explanatory: perhaps they hope customers will go home and cook better. Regarding chatgpt, who writes reviews for me... I suggest you start using it by searching for the word CELIAC DISEASE so you can perhaps avoid your ignorance poisoning people... 😘
