03/02/2025: We went to Villa delle Mimose for my mother-in-law's birthday with the whole family and the experience was really positive! The elegant and welcoming atmosphere made the lunch special, but the real highlight was the food. We tried the spaghetti allo scoglio, rich in flavor and with an excellent selection of very fresh seafood, and the crispy and light fried fish, really well done. All our guests were satisfied with both the quality of the fish and the attentive and courteous service. A place to consider for special occasions, especially for lovers of seafood cuisine!

15/03/2025: Excellent place for a great, authentic meal. The crostini toscani are delicious and the grilled pecorino cheese is a must. Also, save some room for dessert because their home-made caramelized figs are amazing. Can’t wait to go back. A must!

Authentic, or rather family-style, typical cuisine recipes, such as Sassetana-style figs, wild boar skewer and baked pork leg with a fantastic marinade flavored with Mediterranean scrub. Best Tuscan appetizer in all of Tuscany. I can continue. Authentic experience of the flavors of these areas. It's worth the trip without even thinking about it. Fair prices for the quality of the food.

27/01/2025: Unfortunately we had a really bad time. We had already scheduled lunch yesterday, January 26, 2024, for a few weeks. A team lunch. Fixed menu already decided. Unfortunately I have to say that we all had a very bad time. Not good food both fish and meat (children). The only decent thing was the frying... for the rest we're not there... it may have been an isolated case. But I am only discussing what I have personally tested and I must say in spite of myself. I wouldn't go back and clearly won't recommend it to anyone...sorry.

13/03/2025: Che dire lo chef Pino non si smentisce mai con la sua favolosa cucina. Pesce sempre fresco e preparato senza tanta lavorazione per far sì che il gusto resta quello reale. Sono solito prendere degli antipasti di crudo, che sono veramente squisiti, deliziosi, freschi ed abbattuti, nonché impiantati con classe. Ricci di mare ostriche scampi salmone tonno, il tutto veramete squisito.Personale di cucina preparato e all’altezza, come l’aiuto ai secondi. E che dire della sala tutti professionali e attenti al cliente. Non mancano dei vini ottimi sia bianchi, bollicine che rossi.Per finire sempre una bella esperienza culinaria.

23/03/2025: We had a great evening at the restaurant. Service was excellent, welcoming and patient. We had salad and egg-yolk dish for starters. The egg-yolk dish is something you don’t want to miss. The salad was huge but the lettuce was bitter. The main courses were fine (pasta and sirloin). For deserts we had the crema catalana (a version of brûlée) and ricotta di pecora, both were delicious and surprising in taste. We accompanied the dinner with Chianti Classico reserva which was great.

The choice of various flours is appreciable, I love the rice and oat flour. If you've never been there, I recommend the tasting... it's worth it. Very kind owners.

Chef Mirko, a real character, offers a menu with different variations. Here you can caress tradition with soup or tripe Volterra style, real delicacies. The fantastic platters of cold cuts and cheeses, pici in all sauces... until you get to the undisputed queen... meat... slices, fillets, with mushrooms, truffles, flakes of parmesan and so on... pizza... and also a cuisine that is attentive to celiac disease, even gluten-free is to be praised... But let's get to the point... today my partner and I set off on purpose for a real culinary binge of fish and rice and vegetables... in a few words a magical paella... what can I say, first it kidnapped us and bewitched our eyes then it made us dream with the taste... we can only thank the chef and all his magnificent staff for this culinary journey that from Valencia, made us touch Madrid with a finger, fly on the Rambla in Barcelona, ​​to finally bring us back to Volterra truly satisfied and contented... thank you from the bottom of my heart... I recommend you all to try the Don Beta...it's worth it...
01/04/2025: Splendid place in the historic centre, on several floors, I recommend the ground floor because it is close to services (if you don't want to go up and down the stairs...), waiters with the typical Tuscan friendliness. Let's get to the food; Maybe it's because we were a group of 30 people BUT, strict diet portions and pappardelle with hare ragout passed off as wild boar ragout (after several requests the waiter confessed), good sliced ​​beef with rosemary but only 3 small pieces each, good baked potatoes and divine Tuscan white beans, sweet tiramisu finished with a spoonful. I left hungry.... No chance of an encore or another tasting. If you are on a diet it is perfect otherwise I recommend choosing other places.
