29/05/2025: Como comensales experimentados que han tenido el privilegio de experimentar prácticamente todos los restaurantes Michelin de 3 estrellas de Italia, nos quedamos genuinamente horrorizados por nuestra reciente experiencia en Casa Perbellini – 12 Apostoli en Verona. Desde el momento en que entramos, algo se sintió mal. Tardó entre 12 y 15 minutos inexplicables en ofrecerse un aperitivo, una espera que sería cuestionable incluso en una trattoria provincial, y mucho menos en un establecimiento supuestamente en la cima de la gastronomía mundial. La diversión – bouche – típicamente el momento del chef para despertar expectación y deleite – cayó vergonzosamente plana. Suave, poco imaginativo, y carente de la finura que uno espera a este nivel. Pero peor que la comida fue el servicio: indiferente en el mejor de los casos, negligente en el peor. El personal parecía desinteresado, con un aire distante que rozaba el desprecio. Ni una vez nos sentimos bienvenidos, valorados o comprometidos. El sumiller, en particular, estaba sorprendentemente desencajado. Su falta de pasión e iniciativa contrastó con los vibrantes y expertos sumilleres que hemos encontrado en los mejores restaurantes de Italia. Después de soportar esta atmósfera fría y poco inspirada durante demasiado tiempo, tomamos la decisión de dejar un establecimiento con clasificación Michelin, algo que nunca habíamos hecho antes. Simplemente no valía más de nuestro tiempo, ni de nuestro apetito. Lo más desalentador, sin embargo, fue la ausencia total de lo que hace que la comida italiana sea tan única: calidez, espíritu, hospitalidad. Esta no fue una experiencia culinaria; fue una procesión sin vida. No recomendamos encarecidamente Casa Perbellini – 12 Apostoli a cualquier aficionado genuino de la buena comida. En nuestra opinión, no merece su lugar en la guía Michelin, y mucho menos su prestigiosa clasificación por estrellas. 24/05/2025: La modesta entrada de la estrecha vía Antonio Tirabosco no nos da una idea clara de donde vamos a entrar a comer. En este caso a celebrar la felicidad gastronómica y enológica de una comida imborrable. Ni qué es lo que la historia ha tenido a bien conservar bajos lo que hoy es el espacio que recoge el restaurante de Gian Carlo Perebellini. Cocinero que desde los 18 años entró a trabajar en esta casa y se quedó al mando del restaurante. Visita por las instalaciones para contemplar desde las colecciones de plumas de invitados ilustres, que han merecido el premio Mondadori, o las ruinas romanas que hablan de los siglos de historia donde se ha construyó el espacio que hoy acoge a un delicioso espacio que muestra la como un pastelero ha ampliado el camino hasta llegar a ser uno de los mas grandes referentes de la cocina italiana del siglo XXI. La experiencia de la mesa del Chef, agradabilísimo espacio que permite contemplar muestra se come el largo menú, del silencioso trabajo de un equipo bien conjuntado de 12 cocineros, más el Chef, que pasa notas, y se acerca constantemente a la mesa para comprobar que todo está funcionando como un reloj. La sala tiene clase y juventud. El sumiller conoce el riesgo de tener que incorporar cada día nuevos maridajes para un menú que no cesa de transformarse donde harinas, quesos, verduras marcan la espina dorsal. Panes recién horneados, crujientes costras comestibles. No podemos negar que el pastelero se aúpa en la cocina para ofrecer bocados donde las texturas marcan universos minúsculos y secuenciales. Regalos como el caviar con un minisorbete de fruta de la pasión (zabaione&caviale affumicato). O los deliciosos grissinis de notas ligeramente ahumada. Que vuelven, una y otra vez a ser repuestos cuando apenas quedas un par. Si el amplio surtidos de mini bocados que abren el menú no son un muestrario de lo que podremos disfrutar, la segunda propuesta después del caviar, llega de la mano de un crujiente bouquet de espárragos verdes y cigalas. Sabor, texturas, frescura en boca. Que van más allá con el tomate, gel de vinagre de apio y una encantadora espuma de bearnesa. Sencillo y eficaz. Un regalo para esta primera parte del menú, donde queda algo perdida la lubina, en un tartar junto a queso de cabra y un extracto de regaliz. Quizá el más ligero de los platos, pero que enamora el crujiente que hace las veces de milhojas. Impecable el dentón, también con un buen juego de mascarpone y anchoas del Cantábrico, que están muy de moda entre los grandes de la cocina transalpina. Delicioso el juego del ravioli de leche de cabra con agua de guisantes y gamba roja. Aunque reconozco que los guisantes nacionales son más dulces y tienen mayor sabor. Sonrío. La pasta, unos fusili con almejas, se acompañan de un cremoso de anduja, esa sobrasad proveniente del sur de Italia, a la que acompaña una bisque de crustaceos. Plato sobresaliente, como vienen siendo todo lo probado. Dos carnes cierran el menú, un cordero y una ternera con pecho de pichón. Los postres se extienden en primeros bocados, un azúcar de chocolate, y más regalos dulces. No estaría nada mal seguir la ruta mundial de todo los tres estrellas que ofrezcan tanta felicidad con un valor económico tan correcto. Sobre 350€. Los cafés, las grappas, las risas y la conversación, quedan para el privado.

25/05/2025: I'll be honest, my wife didn't understand where she came in, we didn't intend to go to a high-level place, we thought of something simple and low-cost and instead making a mistake and not realizing where it was, we ate in a restaurant where they welcomed us very well, in a very well-kept location, we had excellent treatment with explanation of the dishes and origin of the raw materials, not a novel but what is needed. In addition to the explanations I must say that the dishes were really well-cared for in the presentation but above all they moved our palate because they were good. There is cooking and then there is cooking, with the colors, the scents, the flavors, this one costs a little more but not that much and if you can, every now and then, it is worth trying it

They had a "dough of the day" for pizzas, which we had with chia, flax seeds, and other ingredients, which was truly delicious! The fruit panacotta was super tasty because the sauce was homemade and not that sweet, industrial mush. The house wine is also selling really well :)

10/05/2025: I learned about this restaurant via Michelin guide. It is a middle sized restaurant with modern design atmosphere. The service is efficient and friendly. We took the 59 euro tasting menu and I really liked the choices. For starters we had trout and beef tartar. Trout is very finely cooked and beef tartar is quite innovative. For first course we have chosen spaghetti, the flavor is good, too, with a fine touch of pistachios. For main dish I followed the suggestion of the staff and took the pork shank. The cook timing is finely controlled with a nice sweet and sour flavor. It reminds me of Chinese way cooking pork but still this one is crispy on the skin. For dessert we took one Mille feuille and one panna cotta, both are great. I think panna cotta is a little bit lighter in flavor as Mille feuilles have very heavy filling. I do enjoyed my lunch at this restaurant.
10/05/2025: This is our favorite restaurant in Verona. It’s a casual restaurant but the quality of food speaks volume of the quality and passion of the chefs. This restaurant was started by 4 chefs, one of the partner is chef Giancarlo Perbellini who also runs the only 3* Michelin restaurant in Verona, Casa Perbellini 12 Apostoli. I had the opportunity to try the fine dining outlet but I personally prefer the food here at Locanda 4 Cuochi. We really enjoyed the food here. It’s creative and fun. Service was also very attentive with English speaking staff. Overall, I highly recommend making a reservation prior going there as it can get pretty crowded.

03/05/2025: Simply fantastic from start to finish! Right from the start, the dishes were explained and recommended to us with passion, which immediately captivated us. We had a beautiful outdoor table that Marco had arranged for us – Marco was simply fantastic! Thank you for this unforgettable evening and the wonderful food. Our favorites are the gnocchi, which melted in your mouth, and of course the creamy tiramisu, a true feast for the palate. We would love to return again to enjoy this fantastic food and outstanding service.
26/04/2025: If you pass through Verona you absolutely have to go there. Unique culinary experience, the wine experiences are also beautiful. Super prepared and very kind staff.

The very kind dining room staff, the kindness of those who love their work and do it with passion. and the food? Everything absolutely delicious. Non-obvious dishes, refined and with a unique flavour. We took the land tasting menu, each course was a feast for our taste buds! I loved every dish, every plating, even the bread was excellent! I highly recommend it! You won't be disappointed!
