21/08/2024: Without a doubt the best dining experience I have ever had in Italy, and in contention of all time. The setting of the dining area and food itself are so true to the local area. The staff were both friendly and professional from the moment you walk in the door to your departure and took pride in explaining the sources of their ingredients, which are almost entirely drawn from the local area. A landmark of Puglian cuisine, and a must stop for anyone traveling through the area!

17/08/2024: Recently relocated on a terrace with wonderful views on Trani medieval castle, the Di Gennaro family built a close to perfection fine dining Apulian experience. The restaurant is beautiful both inside and outside, refined and perfectly blended in the environment. The service was excellent, kind and friendly with invading our spaces. The restaurant had also no problem into accommodating variations on the menu proposed. But let’s come to the reason to come here, the gastronomical offer of Quintessenza is deeply rooted into the chef local background, relying on seafood and not being afraid of using staples of the regional cuisine twisting them into something more. The menu we tried was a crescendo in intensity and depth but keeping its balance all the way through from the amuses to the dessert. Personal favourites are the Tortellini and the Fusillone with a mention for the Alici fritte and the Coffee almond and lemon dessert.

25/10/2024: Un ristorante senza eguali. Locale apparentemente rustico che nasconde un ambiente elegante e raffinato, arredato con gusto e attenzione al dettaglio. Staff dotato di professionalità, pronto a soddisfare ogni esigenza del cliente. Abbiamo cominciato con un antipasto a base di seppia al pistacchio, caponata e pittule e capocollo, piatti apparentemente semplici ma che nascondono un’ intensità di sapori unici e inaspettati. Come primo abbiamo preso uno spaghetto ai ricci e dei tagliolini al tartufo, piatti sublimi dal sapore eccezionale, tutte pietanze realizzate con materie prime di inequivocabile qualità. È stata letteralmente un’esperienza gastronomica, ottimizzata da un accostamento accurato di vino gentilmente consigliato dal personale tra la loro vasta selezione. Abbiamo mangiato divinamente.

28/08/2024: Hi, we were a few days ago because we were on holiday and unfortunately we didn't have a great time. We took some parsley tagliolini with seafood and in the dishes we found two tiny mussels and two prawns and the octopus with a potato base and the octopus was hard and we also had ordered the chicory which was sautéed chard unfortunately disappointing

28/08/2024: Very nice place in the historic center of Noci, nice and friendly service and staff and also very fast (which is not a given in the area) the food reminded me of some dishes that my grandmothers prepared.. well done, keep going like this..

01/11/2024: Unique and refined environment. The girl who served us at the table was really very kind and nice. Very friendly owner. Exceptional food. Every single course. From the Murgia appetizer, tuna carpaccio, orecchiette with burnt wheat, spaghetti with clams, mixed fried fish and baked cod. Excellent dishes. In the center of Trani near the cathedral. Everything clean. Ditto the bathrooms. Very short waiting times. Excellent value for money. Will return and highly recommend.

07/12/2024: We willingly returned as we had wonderful memories, both for the food and for the service and the environment... but this time unfortunately we have to say with regret that the rudeness and rudeness of the staff (one in particular) ruined the good memories and the evening. It's a shame because the place and food remain good.

23/08/2024: After a visit to the Castellana caves we decided to go to lunch in this restaurant, we started with a truly excellent mixed house starter, consisting of six courses: burrata that melted in the mouth, local pecorino, omelettes with vegetables, meatballs with sauce , asparagus wrapped in bacon baked au gratin and finally capocollo of Martina Franca top. Followed by spaghetti with mussels and datterini tomatoes and tagliolini with speck, fried aubergines and cherry tomatoes. Followed by mozzarella wrapped in bacon cooked on the grill and aubergines parmesan, all truly exceptional. The only flaw found in the midst of so much perfection, the chef doesn't blame me, was some cooked ham in the parmigiana which we didn't like very much. The service is friendly and attentive, The prices are more than fair for what they offer. Highly recommended.

19/09/2024: Siamo andati per una festa di compleanno. Era da un po' che non mangiavamo lì. Il servizio è stato cordiale e sollecito. Ogni piatto era ben presentato e aveva un sapore così buono. Questo è un ristorante tradizionale, quindi il menu è fisso. La qualità del cibo lo rende molto piacevole. L'atmosfera è piuttosto accogliente. Non sono sicuro di come facciano a rendere la carne grigliata così tenera. Mangi bene ogni volta qui.

22/09/2024: Restaurant located in the center of Racale with a very large environment made up of several rooms, all very characteristic. The menu is mainly composed of typical dishes of the Salento tradition. We took the tasting of appetizers for two which was very abundant and you could even have dinner with just that, a must try. Afterwards we ordered the risotto with turnip top cream and red prawns which was excellent and the grilled prawns were also good. Caring and welcoming staff. An added value is represented by the owner Tonio with whom we stopped to chat at the end of the evening and who made us feel at home. P.S. ask to see the pool in the cave, you will be speechless!
