19/08/2026: A truly wonderful experience at Quintessenza, one of the Michelin-starred restaurants that impressed us the most and certainly one of the best in terms of value. The restaurant is elegant and well-maintained, but the real added value is the terrace: dining with a view of the Swabian Castle and Trani Cathedral overlooking the sea, while the sun sets, is simply spectacular. A special mention goes to the staff, who were truly exceptional: professional, knowledgeable, and at the same time very helpful and spontaneous. We felt at ease in a way we've rarely felt at a Michelin-starred restaurant. The cuisine was a real crescendo: from start to finish, we found every dish delicious, with a special mention for the spaghetti with smoked anchovies, truly exceptional. We also greatly appreciated their willingness to allow us to alter our itinerary to try some dishes from the other menu. Overall, an experience we would definitely recommend. The food, location, service, and atmosphere lived up to expectations.

19/08/2026: We had the pleasure of dining at Quintessenza during our stay in Trani, and we can say without hesitation that it was one of the best Michelin-starred experiences we've ever had, especially considering the value for money. The restaurant is truly elegant and refined, without feeling cold or overly formal. We were fortunate enough to dine on the outdoor terrace, and the location, in the summer, is simply spectacular: the Swabian Castle is practically next door, and a little further on, you can enjoy the view of the splendid Trani Cathedral overlooking the sea. We arrived as it was starting to get dark, and we were able to watch the sky gradually change color throughout our dinner. It's truly an atmosphere you couldn't ask for better. The table setting is also very unique and successful. The tables are arranged in a continuous, sinuous composition, almost forming a large "S," a solution that manages to keep diners close together without compromising privacy or tranquility. A truly well-considered aesthetic and functional choice. But a special mention goes to the staff. This is probably one of the aspects that struck us the most. They were young, well-prepared, and professional, yet at the same time extremely spontaneous and helpful. At no point did we feel "stiffened" like some Michelin-starred restaurants can: we felt at ease throughout the evening. Huge applause to the entire team, truly impeccable. And then, of course, the cuisine. Each dish was better than the next. We chose the classic menu, but they gave us the option of making two changes so we could sample some dishes from the other menu. They were extremely helpful from the start, and in the end, we were able to practically create the menu we wanted, sampling the best of both menus. This attention to customer service was truly appreciated. From a gastronomic standpoint, there's really little to say: surprising, balanced, and above all delicious dishes. It's one of those restaurants where you don't just appreciate the technique, you actually end up remembering what you ate. We paired dinner with the wine menu. This is perhaps the only area where we found room for improvement: we've personally experienced more exciting wine itineraries at other Michelin-starred restaurants. However, it must be said that the price is absolutely reasonable: €60 for six glasses makes the itinerary very affordable considering the overall quality of the experience. All in all, an experience we absolutely recommend. Quintessenza managed to surprise us not only with the cuisine, but with everything: the location, view, atmosphere, service, and customer care. A Michelin-starred restaurant where we truly felt at home and which, if we were to return to Trani, we would definitely try again. Congratulations to the entire team!

10/05/2026: The restaurant is pleasant and the service is friendly, but the spaghetti with clams for €18 was disappointing: there were about 10 shells on the plate, only 7 of which actually contained clams. I mentioned this at the cashier and was simply told they'd report it. It's a shame, because from a restaurant of this caliber, I expected more generosity on the main ingredient of the dish.

03/05/2026: Good morning, on 02/05/2026 I went with my wife to Al Gambero for dinner, everything was fine, the staff were absolutely friendly and efficient, the polenta with creamed cod was excellent, the tagliolini with truffle was the same, I will definitely be back with my wife and children, the staff were very friendly!

30/07/2026: What a disappointment... We arrived at this lovely restaurant, and the promise was excellent given the very characteristic location. However, it took an hour just to order, and the food was anything but typical... A place for tourists who leave happy because they don't know Italian food. Definitely avoid.

13/04/2026: An excellent experience in Noci at Al Boschetto. Convenient location and excellent service, with friendly, prompt, and honest staff who warned us about the generous portions. The appetizers are the real highlight: plentiful, varied, and absolutely unmissable, a true immersion in local flavors. The meat is also excellent; the large rib-eye steak is truly spectacular in size, yet still quite thin. Prices are absolutely fair for the excellent quality and abundance offered. It's best to book well in advance, especially on weekends and holidays.

You can sense a meticulous search for raw ingredients, enhanced without ever being overdone. The process is surprising: textures, temperatures, and contrasts are carefully considered, and each course manages to amaze without losing its balance. The service is attentive, knowledgeable, and never intrusive: each dish is explained with passion, making the experience even more engaging. This place is definitely worth a visit, and I would gladly return.

I asked questions because I was curious, and I learned that he was in the same business, so I learned that it was a family-run business that was coming of age this year. The recommended wine was perfect for us, and the fava beans and friggitelli were also really good. The attention to detail in the bathroom was exceptional. Well done! And so much passion and patience...

The location is immediately striking: the space is furnished with extraordinary taste and originality, successfully combining a welcoming atmosphere with stylish details. The service was impeccable: attentive, thoughtful, and always smiling, the staff made guests feel welcome from the first to the last minute. The cuisine deserves a special mention. The traditional first courses, revisited with a modern, gourmet twist, are simply delicious. The choice to highlight local ingredients while maintaining a perfect balance between innovation and substance is greatly appreciated: the portions are decidedly generous, which is far from a given when it comes to sophisticated plating. An excellent experience in every way. Highly recommended if you're in Altamura and looking for quality cuisine in a unique setting!

09/08/2026: A decidedly unpleasant experience, one not to be repeated. We waited over an hour without receiving our dishes. When we asked for an explanation, we were told they would bring everything together, from appetizers to main courses. Our order had obviously been forgotten or handled very poorly. We left the restaurant after about two and a half hours, leaving behind some of the dishes we'd ordered because we were no longer hungry. The worst part? When it came time to get the bill, not even an apology or a gesture of attention. A terrible experience, both in terms of the service and the total lack of professionalism and consideration for the customer. An experience definitely not to be repeated.
