02/11/2025: Great experience! We are trying to eat at all of the Michelin star restaurants in Rome and this one is not to be missed. Very approachable, without being too casual. The chef/owner creates some very unique dishes. The tasting menu was fantastic and quite filling with all of the accompaniments. While this is not a vegetarian restaurant they do offer a vegetarian tasting menu as an option. The service was immediate without being rushed. The wine list was phenomenal. fantastico!

18/10/2025: An unforgettable evening at the Glass Hostaria in Trastevere! The service was first-class, attentive, and warm without being intrusive. The decor and atmosphere—modern, elegant, and perfectly coordinated—immediately create a special ambiance. A highlight was that Christina, the chef, personally came to our table and greeted us—a wonderful gesture that made the evening even more special. We opted for the vegetarian tasting menu, which impressed us with its creativity, balance, and flavor in every course. The eggplant was simply perfect—we've never tasted anything better! We would also like to particularly emphasize the consideration given to my wife's gluten intolerance: The menu was customized and lovingly adapted—everything was delicious. A big thank you to the entire team and to Christina for this exceptional evening. Highly recommended—a culinary experience of the highest caliber!

13/10/2025: We celebrated my 50th birthday and my daughter's graduation here. Two beautiful parties. Everything was perfect and wonderful. Alessandra and her staff are truly one of a kind. Stefano, the singer, is a special person, excellent at his job, polite, friendly, and always ready to please. Thanks to Alessandra, our events were so exciting, thanks in part to her, because she organizes everything down to the smallest detail. I highly recommend New Green Hill without a doubt.

Every aspect of the evening—from the setup to the welcome to the guests—was handled with rare precision and professionalism, making the event even more special. Truly commendable attention was paid to my two guests with special dietary needs: one with celiac disease and one with nickel intolerance. A waiter looked after them throughout the evening with extraordinary kindness and care, ensuring they always had special, safe, and punctually served dishes. This sensitivity to everyone's needs made a huge difference and contributed to the serene and inclusive atmosphere. The farmhouse is not only aesthetically beautiful: the spaces are well-maintained, tastefully furnished, and capable of creating an elegant yet welcoming atmosphere. The menu, then, was a real highlight: breathtaking dishes, rich in flavor, presented with great care and appreciated by all the guests. I would return here a thousand times over. It's a place that offers not only beauty, but also professionalism, human warmth, and a quality of cuisine that leaves an impression. Highly recommended for anyone looking for a truly perfect event. Not to mention the friendly service we received, even though they only speak Italian and little English, they tried hard to make us understand. Price-quality ratio. We dined on the terrace because the weather still allowed it. A great place in this area.

12/11/2025: The essential mystery of this place is the name. In a city full of restaurants being ostentatiously old world-y, this one stands out for being very, very contemporary. Not always in sensible ways - having the entrance to a medium-sized restaurant be an unmarked passage in the back of a much smaller wine bar causes equal parts confusion and congestion. The drawer full of cutlery choices does not mix well with high tables and stools - a comfortable sitting position makes it nearly impossible to retrieve anything without standing up. This is all outweighed by the food. It's smart, elevated takes on (mostly) Italian cuisine, with an eye to global trends but most of the focus on how to heighten flavour while maintaining balance and cohesion. While you could find the tiniest of faults here and there - the pork main was just a tad under-seasoned, for instance - several dishes were quite literally perfect. The pumpkin risotto on offer that night was one such example, with incredible depth of flavour balanced by warming spice and a perfectly al dente texture. I'm not sure I've ever tasted a better one. The mackerel starter was similarly superlative, though completely opposite in composition and flavour profile, speaking to the kitchen's versatility. The wine list is also very good, trending towards the natural end of the spectrum which is fine by me. You may need to be assertive about preferences (the first person I discussed my choice with was great, but the second didn't actually wait to hear what I wanted before running off and grabbing a glass of something I didn't), but it's well curated and has a notably broad range of price points and styles. All in all, many of the best bits of fine dining without some of the added overheads and nonsense. Highly recommended.

07/11/2025: This was our second visit to the restaurant: the first time it was just the two of us, and because we enjoyed it so much, we decided to return with seven people on our next trip to Rome. We weren't disappointed this time either. The pasta, the fish, and the other dishes were superbly prepared and delicious. The excellent wine paired perfectly with the food. The service was attentive and friendly, and the beautiful ambiance made our evening particularly enjoyable once again. We will definitely be back!
