23/03/2025: I went to dinner yesterday with my partner and I have to say it was a very satisfying evening. Excellent pizzas and appetizers, with the possibility of choosing pizzas that recall the place. Friendly staff. The timing was right, neither too slow nor too fast like many crowded pizzerias do to let people in every minute. The dessert was also very good, a warm heart cake with white chocolate and raspberry, we will return when we are in the area. 5 stars deserved!

30/03/2025: This evening I was a guest of this restaurant for my niece's baptism. I had heard good things about this place, perhaps too many expectations. For this event we had exclusive use of the room downstairs: a lovely setting, beautiful colors and beautiful decorations. Too bad it is not cleaned as it should be. Just look at the cobwebs near the nude portrait on the wall at the back of the room. Let's talk about the food and the service: We started with the aperitif that did not arrive at our table until after we had pointed it out to the waitresses (these were questionable in professionalism and management of the entire service). When the appetizer arrived there was neither cod nor, much less, Ascoli olives. The veal with tuna sauce was very good, served with a little lamb's lettuce salad. A very welcome combination. The porcini mushroom tart with fondue was also really appreciated, a little less the puff pastry with buffalo ricotta and vegetables, the latter however edible unlike the first: paccheri with rabbit ragù and pecorino cream. Inedible! Stringy! the consistency of the pasta was strange although the ragù was good. The Fassona beef with Barolo grapes was very tender and tasty, it melted in the mouth. I couldn't eat the cake because it was too late. In fact what I'm about to write is the main reason for the only star for the service. We entered at 6 pm and many of us left at 10 pm without having eaten the cake due to the service. We also waited 1 hour and a quarter between one course and the next. An unacceptable wait, stressful on a day that should have been relaxing. My son was served raw chicken cutlet so he couldn't eat it. You also have to be careful with the water bottles because they had black residue like filter waste inside.

10/03/2025: Sabato 8 Marzo pranzo presso il Ristorante La Sfinge, ubicato nel quartiere antico della città di Varallo, ai piedi del suggestivo Sacro Monte, con veduta sul fiume Mastallone. Di fatto la struttura del Ristorante-Pizzeria dispone anche di cinque confortevoli camere di recente ristrutturazione con vista sui fiumi Mastallone e Sesia. Location molto vintage composta di 4 sale di cui una all’aperto con vista fiume, utilizzata per lo più durante la bela stagione. L’ingresso posto all’interno di in un cortile da direttamente in una stanza dove è presente la cassa ed la zona bar, dipinta con un intenso blu cobalto, creando un’atmosfera elegante e rilassante. La principale sala interna, si presenta intima ed accogliente, al limite del vintage anni ‘70/’80. Presenti diversi tavoli per coppie ed un tavolo rotondo per 4/6 persone. Noi eravamo in 4 e, purtroppo, ci è stato assegnato un tavolo si con 4 sedie, ma più appropriato per una coppia, tant’è che una volta i piatti, insieme ai bicchieri ed alle bottiglie, non lasciava molto spazio. Presente poi una piccola saletta, al livello superiore percorrendo 4/5 gradini, molto intima e raccolta, ideale per coppiette alla ricerca del romanticismo e della privacy. Menù proposto abbastanza ridotto di piatti, peraltro tutti preparati con cura ed attenzione, con proposte del giorno ed una infinità di pizze. Noi abbiamo optato per il Lucullus, un piatto di gran misto di pesce (adorabile per qualità e porzioni), per il Cous Cous di Pesce (a sua volta gradevole, forse con troppe cozze e vongole), delle Linguine con pesto, ed una pizza Montana. Mezzo litro di Bianco fermo, 2 bottiglie di acqua e per concludere dessert della casa: torte, creme e gelato. Il Ristorante è accogliente così come il personale di sala, cortese e disponibile. Ha giocato a nostro favore il fatto che era la giornata dedicata alle Donne e probabilmente molte persone avranno passato la serata per cenare, quindi a pranzo il locale non era molto affollato ed i tempi di attesa sono risultati adeguati. Conto finale appropriato.

12/03/2025: The food is quite tasty, but the portions are quite small. Especially strange for pasta, which is usually not spared in Italy)) And the service was quite long. Otherwise, it's an ordinary restaurant, nothing special. It would be very nice to remove the decoration from cheap artificial flowers))
