Sergio demonstrates extraordinary mastery in the kitchen: carefully prepared dishes, top-quality ingredients, and flavors that express the region with elegance and respect. Antonella in the dining room is simply impeccable: welcoming, professional, attentive to every detail. She makes you feel like a guest, not a customer. What's truly striking is the perfect balance between: • absolute quality of the ingredients • true professionalism • authentic atmosphere • attentive but never intrusive service You can clearly sense that behind this place are years of experience, passion, and dedication. In a world where we often chase trends, here you can experience something much rarer: substance, identity, and love for one's work. 09/04/2026: A good aperitif and appetizer to start the day. Both the appetizers and the main course were excellent. Wine by the glass was also good – local Chardonay and Primitivo. The meat and seafood were fresh and well-prepared. And most importantly, it's one of the few restaurants where you can still order something at 3:30 PM: we went through two of the selected ones that were already on their break until 7 PM.... I'll definitely be back because it's worth it.

09/04/2026: Excellent place! Menus in several languages, even French, which is great! Very warm welcome and service, a complimentary drink, and a wide selection of high-quality fish, pasta, and meat. The fish of the day is presented to you before cooking. Superb setting, quiet terrace. A wonderful experience! Thank you!

15/03/2026: One of my favorite places One of my favorite places, not just in Altamura, but in general. The quality is truly top-notch, and every time it's a unique sensory experience where Chef Donato Calvi amazes you with each of his creations. My favorite dishes are the spaghetti experience, the savory panettone/colomba, the fake risotto, the marrow with tartare, and the gelato with warm brioche. My wife, on the other hand, is captivated by the artichoke with sour cream, but I recommend trying them all because they're truly worth it.

The food is truly exquisite, the owners are friendly and helpful, the staff is very professional, and the chefs are truly wonderful. Highly recommended.

02/04/2026: I went to this restaurant with my family to celebrate my mother's 70th birthday. From the moment we made our reservation, the owner was kind and helpful. We spoke several times by phone to plan the menu and cake selection. Upon our arrival, we were greeted warmly, once again with extreme kindness and helpfulness. The lunch, which included appetizers, first courses, and second courses, was superb, beautifully presented, and delicious and authentic. The cake, created by the restaurant's chef, was also up to par with the rest of the menu: delicious and light. The elegant and refined location is surrounded by a citrus grove, which provides a stunning backdrop; everything is perfect. I highly recommend it, both for a special occasion and for a relaxing lunch or dinner!

15/02/2026: Lunch at Pashà, a tastefully renovated farmhouse, an art gallery in the Apulian countryside. Not only is the lunch worth the trip, but also what you'll see inside: paintings, sculptures, and works of art that blend perfectly with the setting. The weather wasn't kind, but the interior makes you forget the rain, and this place is magical in the summer. The cuisine on the menu showcases the local cuisine with an eye for innovation, but I was lucky enough to try a customized menu that took me back to the legendary '80s in one dish. A very knowledgeable sommelier brought us a perfect Austrian white wine for lunch. Without going into too much detail about the dish, because you have to try it. Raw sea urchin with cauliflower Baby cuttlefish with beetroot Grilled artichoke with artichoke and eel cream Tonnarelli with salmon and vodka, including a shot for the brave Pre-dessert: Absolute Orange Dessert with homemade ice cream and chocolate jelly Everything was truly interesting and delicious. Don't miss this restaurant, it's worth the trip for the food and atmosphere.

09/02/2026: We went to EVO Ristorante and chose the four-course Classics – “U Vuccàun” tasting menu, which we thoroughly enjoyed. I went with my friends to celebrate our friendship, and despite it being winter, the experience was truly pleasant. The restaurant is welcoming; from the first moment you step inside, they make you feel at ease with many little touches. Once seated, we were served immediately. For me, it was a new culinary experience, with new flavors and unique combinations that fully satisfied my palate. The ambiance is minimalist and very refined, with modern and contemporary art prints on the walls, limited seating, and an intimate and elegant atmosphere. The service was impeccable, attentive and meticulous in every detail. One gesture we greatly appreciated: without being asked, they were kind enough to bring us a candle and a soufflé to celebrate our friendship—a truly special touch. I highly recommend EVO Ristorante to anyone who wants to try reinterpreted traditional cuisine and enjoy a unique experience in the center of Alberobello. It's inconceivable that I should be the one requesting an invoice in the US.
