The place is already famous for having won 4 restaurants, and I've been wanting to go there for a long time, and I must admit I was impressed by the experience.

The food is very good, creative with many local and regional elements. In my opinion, the portions could be smaller, as 6-7 courses become a bit much in the end.
The amuse-bouche was delicious—but also quite substantial. The value for money is unbeatable.
It was nice to see creative non-alcoholic drinks like fermented and peppered beetroot lemonade.
The service was very friendly. The ambiance is simple—the space could be improved.
Definitely worth a recommendation for anyone who wants to enjoy regional cuisine at a high level.

We went to EVO Ristorante and chose the four-course Classics – “U Vuccàun” tasting menu, which we thoroughly enjoyed. I went with my friends to celebrate our friendship, and despite it being winter, the experience was truly pleasant.
The restaurant is welcoming; from the first moment you step inside, they make you feel at ease with many little touches. Once seated, we were served immediately. For me, it was a new culinary experience, with new flavors and unique combinations that fully satisfied my palate. The ambiance is minimalist and very refined, with modern and contemporary art prints on the walls, limited seating, and an intimate and elegant atmosphere. The service was impeccable, attentive and meticulous in every detail. One gesture we greatly appreciated: without being asked, they were kind enough to bring us a candle and a soufflé to celebrate our friendship—a truly special touch. I highly recommend EVO Ristorante to anyone who wants to try reinterpreted traditional cuisine and enjoy a unique experience in the center of Alberobello. Thank you very much and congratulations to all the staff!

We went to Evo to celebrate our anniversary. We chose the "Catalogo" tasting menu, a seven-course blind tasting, completely relying on chef Gianvito.
The menu highlights local traditions, drawing inspiration from familiar flavors but revisiting them without distorting them, with ingenious flair.
What struck us most was the thoughtfulness behind every single dish served, showcasing every flavor and ingredient.
The surprise dessert, with a candle prepared by the chef especially for our anniversary, was much appreciated.
An added bonus of the restaurant is the wait staff, who pays close attention to their guests and is highly knowledgeable in explaining each product served.
If you're near Alberobello, we can't recommend Evo highly enough; it's an experience worth trying.

If you're in Alberobello, don't miss this restaurant near the Trullo Sovrano. A minimalist, refined atmosphere, with plenty of modern and contemporary art prints on the walls (the chef's passion), and limited seating. The atmosphere is intimate and relaxed, yet quite elegant. The service was impeccable, very attentive and precise. We tried both the Classics and Vegetarian menus, and both impressed us, from the noteworthy finger foods to the dessert. Simple, traditional dishes with a twist, showcasing often overlooked ingredients (like carob beans or parsley root) to the fullest. We were also very impressed with the wine pairings, which we highly recommend. I recommend spending time with the chef and chatting with him to immerse yourself in his vision of cuisine and have a laugh together.
I'll just leave a small note as a pointer: we would have liked to have had warm bread, and it would have been even better for the olive oil tasting.
A truly positive experience, we'll see you again soon.
