I particularly appreciated the presentation, the flavors, the textures, the entire experience. A great deal of creativity, always in service of taste. Surprises are an integral part of the evening. The food and wine pairing is sumptuous!

07/10/2025: I gave the service 3 stars only because the first courses didn't all arrive at the same time. One course arrived quickly, while the other two took over 30 minutes to arrive. Despite this, the food is excellent, and the atmosphere is welcoming and friendly.

04/10/2025: A welcoming place, the food is a blend of excellent ingredients, innovation, and tradition, including an incredible farmyard ragù and exceptional homemade pasta. The service is incredibly friendly and professional. An excellent wine cellar is also available.

28/10/2025: An Italian culinary institution. It's no surprise that in a secret, private room next to you, a king of some European nation is dining. The place has a layout halfway between sky, land, and sea, with an interior designed for warmth and hospitality. A room with a sound system that intoxicates even the ears. Chef Esposito, without mentioning his culinary skills, is now part of Italian cuisine history. Not in excess and experimentation, but in his technical prowess and extreme, perfectionist respect for raw materials. Service began outside the restaurant, where you don't even have to worry about parking because someone will do it for you. This alone gives you the feeling of an experience that will live long in your heart.

29/11/2025: We are not impressed by any dish at all. I am disappointed by how much tasting excitement they as a Michelin two stars have to offer. It is not so good as compared to other Michelin’s I had. The fish dishes were even very fishy in an unpleasant way. The food is just okay, but I have to be critical when they have two stars, with dishes not matched to that honor.

05/10/2025: The owners, besides being incredibly kind and courteous, have created a spectacular hotel and offer a spa just for you! We went here for a two-day vacation. We had dinner at their restaurant, and it was simply fantastic (try the venison). I trusted them with the wine selection, and it didn't disappoint—delicious! Fantastic selection of Italian and international wines! Highly recommended!

27/07/2025: I just want to say to anyone considering this property: DON'T HESITATE TO BOOK! Experiences so perfect, from start to finish, are rare. My boyfriend and I chose their "romantic getaway" package, and now that we've sadly returned home, we can say we've given ourselves a huge treat. The property is truly beautiful, well-designed, and meticulously maintained. I've attached photos of their lobby with its giant banana tree, a space with an incredible view of the surrounding hills. The rooms are delightful, spotlessly clean, and equipped with every comfort. We spent two full days relaxing by the pool, also taking advantage of the poolside lunch service. We ordered two focaccias, which were surprisingly delicious (at a ridiculous price, too—hats off). The package also included an hour and a half of exclusive spa time. Here too, we were pleasantly surprised by the attention to detail: the space isn't huge, yet it's been truly thoughtfully designed. There's a large jacuzzi, a relaxation area, a hammam, a sauna, and showers with various settings. We also found an aperitif waiting for us, unexpected and very welcome. The real jewel in the crown, however, is the I Rodella restaurant: one of the best dinners of my life. The quality was top-notch in every detail: from the raw ingredients to the concept of the pairings, both traditional and innovative. Everything we tried was impeccable, so I recommend them all: the wagyu tartare and the veal fillet, both wonderful, meats that truly melt in your mouth, paired with flavors that complement them perfectly. The tagliolini with truffle was amazing. The desserts were equally wonderful and cleverly conceived. The sablé with caramelized figs took home the award for best dessert of recent years. Simple yet complex, an explosion of flavors and textures we'll never forget. The service, in keeping with the establishment's family-style hospitality, is courteous and attentive, ready to address any inconvenience with a smile—which, however, never happens because they're too good. The off-menu entrees and pre-dessert were very welcome, and their baked goods are also exceptional. Considering the price, this dinner was a gift. We can't wait to go back! "Highly recommended" is an understatement. We will recommend it to everyone, of course, and it will definitely be a regular stop for us. Congratulations, and thank you again for these 48 hours of pure relaxation and joy (especially for the palate!).

08/11/2025: I've been a customer for over 30 years, and this time I wasn't disappointed either; on the contrary, they were excellent. Especially the very young waiter, Franceschetti. The food is perfect, and you can tell they use the highest-quality ingredients. They deserve their three Michelin stars.

10/11/2025: As soon as you sit down, you know you're in a temple of fine dining! Niko Romito is a genius in the kitchen! His sister in the dining room is his right hand! One waiter, however, was particularly arrogant...and a three-star establishment can't afford that! A customer has the right to eat as many dishes as he wants...after all, we traveled 800 km...just for dinner! It's a shame...but I also understand that trained staff aren't easy to find! Still, one of the best three-star establishments ever! Worth the trip!

13/11/2025: Well, yes, I confess: I'm more into trattorias, rustic/popular cuisine, and places, so this is a different story, and I probably don't have the skills or even the palate to review such a place. Themed dinner with a fixed menu (Baccanale 2025) and an exceptional experience from a food and wine perspective, as this restaurant truly pampers you in every sense of the word. Each course was sublime, and the co-star of the dish (sauce, mousse, cream, or side dish) was always worth the "main character": in my opinion, this is the difference between a great chef and a... good one. I can't mention all the courses; I choose the squacquerone and truffle cappelletti with cabbage mousse and smoked Sarawak black pepper, and an extraordinary French white wine (Les Olivettes). Wonderful service, both in the staff and in the various off-menu extras. If I really had to find a flaw, I would have expected a little more from the desserts, and the atmosphere can seem a bit dated. The bill is... "significant," but that's understandable, and you have to eat here (at least) once in your life!

31/10/2025: We began with a warm welcome from Laura, our highly regarded Maitre d' and Sommelier. Guests of the Palazzo Seneca Hotel, where the restaurant is located, enjoyed a tasting experience that explored the senses and tastes of refined, carefully prepared cuisine, embracing tradition with a modern twist and using only local products. An excellent menu, in keeping with seasonality, of the highest quality. The wines... a quality selection, featuring top labels, will guide you on this wonderful occasion... Come to Norcia, and come to Vespasia... highly recommended.

23/09/2025: Our first experience at a restaurant of this caliber. We found the kindness, helpfulness, and quality to be truly top-notch. The dishes were explained clearly and simply, and, in my case, they were careful to find alternatives to the menu to suit my tastes... I definitely recommend them. Thank you so much ❤️
