18/01/2026: If you want to experience Cisternino's true gastronomic experience, a stop at Zio Pietro is a must. Here, you don't consult a paper menu; you "read" it with your eyes, right at the butcher's counter. ​The Experience: The ritual is fascinating: as soon as you enter, you line up in front of the meat counter. The selection is vast and of the highest quality. It's impossible not to order the famous bombette (cheese-filled capocollo rolls, available in several variations), the livers (gnumeredd), and the knife-point sausage. Once you've chosen your meat, it's weighed and sent directly to the "fornello" (the traditional Apulian vertical oven) for slow, even cooking. ​The Food: The meat is simply exceptional: tender, flavorful, and cooked to perfection, with that subtle hint of embers that only a traditional stove can provide. The traditional side dishes are also excellent; I loved the pickled vegetables. ​The Atmosphere: The atmosphere is rustic, welcoming, and authentic. You can feel the atmosphere of old-fashioned shops. The staff is quick and friendly, despite the constant crowds (a clear sign that this place deserves it).

17/01/2026: If you wish to experience freshly prepared, and perfectly grilled meat of Puglia, arm your self with the patient. First you will need to q to select the meat from the butchers fresh counter, afterwards it's the table waiting, and at the end food preparation time. However, it is absolutely worth, because that was the most tender and juicest grilled meat I have tasted.

22/02/2026: This is a nice little restaurant which is also a wine and spirit store offering a fantastic selection of quality local wines and liqueurs. Visited in a group of 8 people, the restaurant is small, but has a great atmosphere. Service was prompt and friendly and our host had a good knowledge of the dishes on the menu. All the food was very tasty, I had a pasta with a wild boar sauce which was absolutely excellent. Everyone in the party seemed to have something different and everyone was happy with their food. I must give special mention to the cheesecake which was served in a deep glass bowl, it was scrumptious. After dinner we were able to explore the wine shop and benefit from the knowledge of the owner. The owner could speak some English and there were menus in English.

08/03/2026: We waited 1 hour and 20 minutes before being able to eat, a decidedly excessive amount of time, with no clear explanation given. The meat was absolutely average, nothing memorable, and certainly not worth the long wait. We had also ordered a side dish well in advance, but after about an hour, we were simply told it was out of stock, so it never arrived. Another negative note concerns the queue management: several times we saw people get moved ahead thanks to acquaintances or friends, which makes the experience quite frustrating for those who wait their turn properly. Overall, a poorly organized experience, with a wait-to-food ratio that doesn't make up for the time spent.

23/11/2025: We had meat bombette, which were excellent. Then we had pizzas, but they weren't anything to write home about I've had much better pizzas. The plates were chipped, with the brown ceramic showing underneath.

20/02/2026: We stopped in for a lunchtime snack and coffee. Full of fresh, homemade pastries. So good. Got offered a lovely strawberry pastry cream tart slice on top of a few other pieces of cake and some focaccia. So yummy and I had to roll down the hill after because I was very full. Lovely service and gorgeous view.

26/01/2026: Came for the cheesecake, stayed for the view of this wonderful round City! This Ricotta style cheesecake is a MODEL and ode to what the best of its kind should taste like. The dark unsweet chocolate chips inside were so unexpected but meant to be! Too bad didn't snap a picture but read below for more tips of this town. Parking was a breeze and easy enough if you park just a little bit before reaching the top of the city! The view for parking was even a gem!
