19/10/2025: Ristorante Calvi proved to be a true celebration of cuisine, where the balance between solid tradition and the Chef's innovative flair reaches a high level. The opening was entrusted to the iconic dish that, alone, is worth the trip: spaghetti in bianco with secret ingredients. Its apparent simplicity hides a complexity of unimaginable flavors, a true sensory experience that, like umami, has a surprising delicacy and a memorable impact. The double cream tortellino was a real heart-stopping experience. This dish literally transported me to Emilia. The pasta, combined with the enveloping creaminess of the "double cream" (perfectly balanced and never heavy), was a demonstration of how the pinnacle of perfection can be achieved in classic cuisine. Truly delicious and comforting. The meat course confirmed the high quality of the ingredients, carefully selected, ensuring tenderness and a bold flavor. To round things off, the coffee-flavored leavened cake, the chef's signature dish, proved to be an excellent dessert. A delightful reinterpretation of the Italian panettone, where the softness of the leavening meets the deep, refined aroma of coffee. In short, dinner at Ristorante Calvi was a complete and satisfying culinary experience. Very satisfied and ready to return!

From appetizer to dessert, chef Donato Calvi expertly crafted his own restaurant concept: contemporary and vibrant, yet respectful of Italian and regional tradition; simple, yet never predictable. The use of ingredients is intelligent and creative, never lapsing into unnecessary flourishes. The welcoming atmosphere, the attentive and professional service, friendly without ever being pretentious, complete the experience. What can I say, if you find yourself in Altamura—or even just in the surrounding area—Calvi restaurant is definitely worth a visit. Recommended: Grilled beef ossobuco, Scottona steak tartare with ginger mayo, Linguine with red shrimp absolute, Brioche with chocolate chips and gelato. 🔝

09/11/2025: The place is welcoming and clean, creating a pleasant atmosphere for a break. Furthermore, the staff has always been courteous and helpful, maintaining a good level of service. I've frequented "Panzè" on several occasions, initially attracted by the excellent quality of their panzerotti. Unfortunately, my latest visit revealed a marked decline from previous standards. The panzerotti, both savory and sweet, were excessively oily compared to the last time, when they were impeccably fried and dry. The biggest disappointment was the sweet panzerotti, which lacked a truly meager amount of cream, leaving a hollow feeling inside, unlike before when they were generously and deliciously filled. The sweet ones, not only have a less pleasant flavor, but also a less pleasant appearance. I sincerely hope this is a transitional period and that the management will review their standards to return to their original quality, especially regarding the frying technique and the generous fillings, in keeping with the excellent service and refined atmosphere they continue to offer.

26/10/2025: A nice establishment, but very out of the way. So much so that, at one point, I thought of the movie "All We Have to Do Is Cry." However, it's ideal for those who want to escape, shake off the stresses of everyday life, and recharge. The owner is kind and attentive, and the staff is young, professional, and motivated. Very welcome. The meal was superior to that of a farmhouse. If I had to comment, they could have avoided having animals in the dining room.

22/09/2025: There are unique places where you feel at home. Tre Archi is one of them. Where time stands still and the palate is delighted, one course after another. Excellent wines are also available, from the cellar. The hospitality of the hosts: Mina, Giuseppe, and their children, makes this place special. Everything is taken care of down to the smallest detail, nothing is left to chance. I celebrated my 30th birthday here and ate here many times with loved ones. It never disappoints! Long live this rare pearl of Apulian dining.

21/09/2025: In addition to the classic grilled meat, excellently cut and finished, which even the children loved, we also enjoyed the excellent mutton stewed in a traditional terracotta dish. It was fragrant and spicy just right, so tender it was perfect for eating with your hands. The house Primitivo was excellent. The staff was helpful and courteous. Highly recommended.

You're transported to an authentic Roman world, despite being in Altamura: the atmosphere, dishes, and details are perfectly reminiscent of Rome. The staff is very friendly and helpful, and the place is truly beautiful and well-kept. I recommend it!

13/10/2025: I went to this restaurant for dinner on Saturday. The food was excellent, especially the pasta dishes and the pinsa. The service is very fast and the waiters are always very helpful. They also have a wide selection of wines to choose from, although you can also opt for a beer, as we did. I will definitely be back.

Generous portions and balanced flavors. A recommended place if you're in Altamura and want a tasty sandwich in a welcoming atmosphere.

The meat was juicy and flavorful, cooked to perfection, with the freshest ingredients you could taste in every bite. The bun, soft yet slightly crunchy on the outside, rounded it off spectacularly. A perfect balance of flavor, quality, and passion. I highly recommend this burger to anyone passing through Altamura: an experience worth repeating! 🍔✨

01/10/2025: The selection and offering of dishes is certainly top-notch, and the deliberate attention to ingredients and the desire to offer a high-quality culinary experience are evident. The other diners had a very positive experience, finding unusual but very successful combinations. Unfortunately, the veal cutlet Milanese definitely didn't match the presentation, service, and the rest of the menu. The cutlet was shared among the diners, who tasted it and confirmed my opinion. The breading was interesting and unique, but it came off the meat, remaining on the plate that was taken away, as did a generous amount of fat. Of the total 800 grams, the final edible portion must have been about half, with a decidedly large bone and all the remaining material on the plate that was taken away. The cutlet then reappeared during the night, both heavy and, unfortunately, causing unpleasant regurgitation. A real shame, because the restaurant's attention and passion for food, pairings, and service were lacking with this dish. The overall experience among diners was positive, but in my opinion, the only dish I ate deserves this rating. I'm just sorry I can't show the before and after, to avoid easy criticisms of "clean plate" or "if only he had said so before," which are certainly understandable, but worthless.
