Very good food, really good, but prices are higher than average.
The fish-based first courses range from €20 to €25 (since I travel a lot, it seems a bit excessive, after all, we're in a small southern town). Most desserts are €10 (again, a bit excessive for a family of four; €40 for dessert alone seems too much).
If they lowered the first and dessert prices a few euros, I think people would come back more often. I'd be the first to say more.
Obviously, I'll give my opinion.
The chef is very skilled, knowledgeable, and kind.

The food is all very good. In the "city of bread," it's a paradox that bread isn't included in the cover charge, but is served separately, as an item on the menu. I understand not wanting to waste, I understand wanting to stand out, and I also understand the added value they want to provide through the price, but it's not a choice that promotes hospitality and customer service. Even in Michelin-starred restaurants, bread is served and refilled at no additional cost, and I'd say without skimping on quality. It's a shame. Furthermore, the savory Colomba cake was served without a drink, while at other tables it was also served. In short, the idea is there; the service and the experience need to be refined.

One of my favorite places
One of my favorite places, not just in Altamura, but in general.
The quality is truly top-notch, and every time it's a unique sensory experience where Chef Donato Calvi amazes you with each of his creations.
My favorite dishes are the spaghetti experience, the savory panettone/colomba, the fake risotto, the marrow with tartare, and the gelato with warm brioche. My wife, on the other hand, is captivated by the artichoke with sour cream, but I recommend trying them all because they're truly worth it.

This summer I had the opportunity to dine at Ristorante Calvi and the experience was excellent. The quality of the ingredients was top-notch and the service impeccably managed: I was pleasantly surprised, even though I already had moderate to high expectations. Special thanks to the chef for his availability and for taking the time to share tips and quick recipes. A restaurant I would return to without hesitation.

The ambience, food, and service are all top-notch. Truly a place of unusual comfort and quality. The menu isn't strictly regional, but rather the expression of a broader (and highly valuable) exploration. It does, however, feature some core references, including vegetables, meats, cheeses, and pasta, but these are alternated or paired in innovative ways with other flavors or with each other, with great attention to the ingredients. A very extensive wine cellar is available. Parking is easy.

It's a real experience! Donato truly knows how to inspire. Every time my wife and I go there, he's always ready to amaze.
The homemade bread, the many interesting options, the work behind each dish...everything is top-notch!
The sisters serving are also top-notch, especially Domenica! A must-try!
PS: He pays close attention to intolerances and allergies, so highly recommended from that perspective too!

A very unique cuisine; the chef loves to experiment with leavened products and a few ethnic ingredients. The dishes are truly refined yet still quite generous. I would only improve the table reservation system.
