15/11/2025: We had dinner as a couple at this fabulous restaurant, and everything was perfect. Let's start with the service: incredibly refined, the fantastic Sara served us from start to finish, taking care of every detail of the dinner. A huge plus was her meticulous knowledge of wines, which allowed her to recommend the perfect pairings to accompany the dishes served. The cuisine: delicious and innovative dishes, we really appreciated the inclusion of fresh truffles on the menu. I personally had the sea urchin gnocco with saffron and fresh truffle, and it was a fantastic experience. The appetizers were quality, and another plus was the freshness of the ingredients, which was evident from the first bite. So, a big round of applause also to the kitchen team for all the effort and care they put into their dishes. Finally, the gift box as a bill holder was a really nice idea. Well done Davide, the owner, a delightful person with great, innovative and high-quality ideas. We had the pleasure of chatting with him at the end of the evening. We were intrigued by his vision of cooking and the care he takes in selecting the ingredients he uses. Congratulations to everyone, we'll be back soon to delight in your cuisine.

06/10/2025: The place is quite small but incredibly welcoming and cozy, with lovely background music. This place was recommended to me, and I have to say it absolutely lived up to my expectations. I'll start by saying that I'm celiac, and this place offers practically everything gluten-free. The gluten-free pizza isn't Roman, but more Neapolitan-style, and it's perhaps the best I've ever had—very light dough, flavorful, and generous toppings. The supplì averaged 7.5/8, and the dessert was incredibly good, a 9 (a sponge cake with cocoa ricotta). If you're celiac, come here!

19/10/2025: Discreet, friendly, and makes you feel right at home. I always enjoy going to this place where you can eat and feel good! I have so many fond memories of family and friends I always go with. Vegan options, but also pinsa, vegetables, and salads. I always find what I want to eat. Approved!

23/09/2025: It's a sure thing every time! Excellent couscous, a variety of toppings for all tastes, delicious appetizers. Small, informal, and charming place with an open kitchen. In the summer, there are a few tables outside. They also offer takeout. A Sicilian gem worth exploring!

The name doesn't lie: the wine selection is excellent and pairs perfectly with the dishes, which are creative and prepared with great care. The atmosphere is intimate and refined, perfect for both a romantic dinner and a quiet evening with friends. The staff is knowledgeable and can offer excellent advice on both wine and the daily specials. A high-quality place that deserves its 5-star rating!

30/06/2025: Non fatevi ingannare dall’esterno: il locale sembra anonimo, ma dentro è una piccola perla. Ambiente curato, raffinato, arredato con gusto. Ti conquista subito. Accoglienza impeccabile, soprattutto grazie a Maurizio, il proprietario: preparato, educato, ma anche simpatico e coinvolgente. Presenta piatti e vini con competenza e passione, senza mai prendersi troppo sul serio. Il Gewürztraminer 2021 di J. Hofstätter che ci ha consigliato è stato un abbinamento perfetto per tutta la cena. Gli antipasti ci hanno stupiti: polpo con patate e pomodorino, tenerissimo e gustoso; calamari con valeriana e frutta, originali e ben bilanciati; parmigiana con mazzancolle, polpo e patate, davvero sorprendente. Nei primi abbiamo trovato gusto e creatività: tagliolini con moscardini e 'Nduja (mare e piccante al punto giusto), e tagliolini con seppioline e pachino, classici ma eseguiti molto bene. Come secondo una frittura di calamari, leggera e croccante. Niente dolce (eravamo sazi!), ma una grappa "Elisi" di Berta ha chiuso la serata in modo perfetto. In sintesi, una scoperta meravigliosa nell’agro pontino. Torneremo sicuramente, anche per l'ottimo rapporto prezzo/qualità!

Il Locale La location si è rivelata perfetta per un incontro professionale: elegante ma discreta, curata nei dettagli, silenziosa quanto basta per consentire conversazioni riservate, e al contempo accogliente e confortevole. Un equilibrio architettonico e stilistico che comunica immediatamente il valore e la raffinatezza dell’esperienza che si sta per vivere. 2. Accoglienza e Professionalità Il ristoratore, insieme al personale di sala, ha saputo distinguersi per cortesia, educazione e altissima professionalità. Ogni gesto, ogni attenzione al cliente, ogni spiegazione sui piatti è stata improntata a un servizio di classe, misurato e puntuale, che ha saputo far sentire l’ospite importante, senza mai risultare invadente. 3. Qualità degli Ingredienti La selezione delle materie prime si è rivelata eccellente. Ingredienti di altissima qualità, lavorati con competenza e rispetto, valorizzati senza forzature, in una cucina che esalta la qualità e la stagionalità dei prodotti. È evidente la cura maniacale nella scelta di ogni singolo elemento del menù. 4. Abbinamenti di Sapori e Presentazione I piatti proposti sono stati un vero trionfo del gusto: accoppiamenti audaci ma perfettamente bilanciati, sapori che si fondono in un’armonia sorprendente, consistenze calibrate e profili aromatici raffinati. Ogni portata è stata un’esperienza sensoriale, servita con una presentazione impeccabile e una cura estetica che riflette l’arte della cucina d’autore. Conclusione Un pranzo di lavoro trasformato in un momento di autentico piacere culinario. Un’esperienza che coniuga altissima qualità, eccellenza professionale e attenzione al dettaglio. Un luogo in cui il valore dell’accoglienza e della cucina si esprime ai massimi livelli. Assolutamente eccezionale.

19/07/2025: Bellissima serata trascorsa in famiglia comodamente seduti ai tavoli della PINSERIA 06! Sul corso principale di Vetralla, ci accomodiamo all’esterno pregustando la nostra cena in occasione di un festeggiamento. La serata è perfetta. Come il clima fresco. Le luci in strada. L’illuminazione della Pinseria che crea la giusta atmosfera. Pinsarelli con pomodorini, mozzarella e origano per cominciare. Poi altra porzione alla gricia. Squisiti! Arrivano le birre alla spina. Fresche e in perfetta armonia con le successive pinse, servite su tagliere di legno. L’impasto é soffice, la cottura giusta. Ma apprezziamo soprattutto la qualità eccellente della materia prima. Concludiamo con ulteriori pinsarelli alla nutella. E con un brindisi. Alla nostra festeggiata, certo. Ma anche al giovane proprietario e al suo personale garbato. Ottima inaspettata serata per chi, come me, abita nella città dove la pizza é una pietanza “sacra”. Ma la pinsa di stasera non mi ha fatto rimpiangere Napoli. A presto Pinseria 06. With calm and helpfulness, he guides you through your choice of dishes, then moves on to the wine selection, which he makes excellent recommendations for. The dishes are rich in flavor and well-composed, while maintaining generous portions. Each dish is absolutely delicious. 24/10/2025: The pizza and calzones are truly delicious, with the aftertaste of the wood-fired oven lingering. Perfectly cooked, generous toppings, and a delicious, easy-to-digest dough. Fried foods are delicious, sometimes a little greasy. The staff are incredibly kind and sincere. The atmosphere is homey and welcoming.

20/06/2025: Excellent gricia, to lose your head... Pasta al dente, perfectly cooked, exceptional pecorino cream and fantastic guanciale crunch!!! Too bad that as soon as the dishes arrived we dusted them off, otherwise I would have posted the photos, but we didn't have time!!!
