18/04/2025: Super working lunch! We wanted to leave our colleagues with good memories of Liguria and we achieved this with the fantastic pesto, on lasagne and chestnut trofie, and with a spectacular fried rabbit accompanied by artichokes, also fried to perfection. The menu is absolutely worth returning to try everything. Large rooms, with beautiful views, and service with a smile. Be careful about parking which is decidedly tight.

22/04/2025: A little pearl in the historic center: high-level Genoese cuisine, adequate wine list, dishes that are memorable (branda, cuttlefish with purple potatoes, black lasagnette, pumpkin gnocchi with fried artichokes and speck, stockfish just to name a few). Going to Gaia is a treat for the palate and a reward for yourself. You can taste and chat, away from the daily rush, in total relaxation.

27/04/2025: Suggestive location, trattoria located in a picturesque little square among the alleys. Authentic flavors and carefully cooked food. Far superior to more famous restaurants or trattorias... on paper. Service: casual but professional. Nice and kind. Price quality, probably unbeatable.

27/04/2025: Lunch on 04/23/2025 The location is strategic, a stone's throw from the old port, in the middle of the alleys of the Genoese center. An informal environment that couldn't be more informal, with the possibility of consuming on site (inside on long tables in cohabitation with other diners, sitting on perches, outside in the small square in front) and of ordering takeaway; open kitchen with pots on display to increase the feeling of "other times". Typical local cuisine, in my opinion well executed: remarkable lasagne with pesto, to which perhaps I would have added a layer to make them even more delicious, abundant and crunchy fried calamari (to be picky a little greasy...), tripe served with dried porcini mushrooms as good as I can't remember for a long time and cuttlefish with peas were our orders. The kitchen staff is courteous and helpful while the service is almost non-existent and the plates are plastic. The bill is all in all economical, even taking into account the spartan environment, in relation to the quality of the cuisine and the generous portions. I liked the place, both in terms of atmosphere and cuisine: rating 9

01/05/2025: SPECTACULAR! We chose the aperitif formula, I had a spritz at Camatti, a local bitter that I love, and it was sensational. The cutting board was abundant and included various types of local focaccia, panissa, farinata and savory pie, all wonderful. I had never been here and it was wonderful, the service was also excellent, fast and attentive. Highly recommended!

14/05/2025: Second time here and the food, service and vibe is great. The beef tartare is exceptional and their specials hit hard too. Good wine choices too. A favourite of Genova

11/05/2025: Eating dinner will be disappointing because eating lunch here was so good. We got the tonno in panzanella as a starter, and trofie al pesto and maialino arrosto for our mains - all were exceptionally delicious

20/04/2025: We were 10 people to eat, all family, they put us in a room from which the kitchen was visible thanks to a door with a plexiglass window. Unfortunately we saw some embarrassing scenes among several people, the cooks didn't have the slightest concept of hygiene, they touched and mixed everything with their hands without gloves and, very seriously, even using their cell phones at the same time which is one of the dirtiest things ever, even dirtier than the toilet bowl. They touched their noses, their heads, their mouths, they took the pre-cooked spaghetti with their hands and threw it onto the pan to fry it, all without gloves, with their mobile phone constantly in their hands, which must have been very dirty with food. Then in the end one of them even sprayed some degreaser on the worktop with all the food ready to come out to be taken to the tables below. It's a real shame because the food was quite good, but the view definitely ruined everything. Who knows how many times this happens to us in a restaurant, but at least we don't see it. We advise the owner to fix his hygiene protocol for the respect and good of the health of his customers, or at least to darken that plexiglass window, at least we will eat well without seeing these embarrassing scenes that risk making you lose your appetite. 10/05/2025: I am writing a new review after a couple of years of frequenting this restaurant. The stars become five for all parameters after, in fact, numerous visits every time we are in Genoa. Always flawless! As my daughter-in-law, another regular visitor together with my son and daughter, says, "it's like going to eat at your aunt's, good and genuine food, warm but not affected welcome and a family environment". What about the food: perfect trofie, excellent fried food because it's freshly made, Genoese minestrone and tripe dishes for which my wife says "this evening we're going to 3 Merli because I'm craving their minestrone or tripe. Everything else follows with equal satisfaction. Long live the 3 Merli and especially those who manage it.

21/04/2025: Prenotato all'ultimo momento con l' entusiasmo del proprietario che, si converte in cameriere e intrattenitore durante il pranzo, allietando il pranzo. Ambiente accogliente con apparecchiatura curata. Ricca carta dei vini con consueto assaggio a tutti i commensali da parte del proprietario. Non c'è vino della casa. Assaggio di frittelle nell' attesa dell' arrivo delle portate. Menù della tradizione ligure con specialità del fritto all' italiana salato e dolce. Correttezza sui tempi d'attesa: siamo stati avvisati che per alcuni piatti necessitava un certo tempo di preparazione. Porzioni giuste, molto curate nell' impiattamento, materie prime di qualità. Prezzo congruo. Da provare...torneremo!

08/04/2025: Disappointment and embarrassment Sunday lunch booked a month in advance but the reservation was lost even though I had called two days before to reconfirm. The two women who answered the phone were totally incapable of managing reservations. Makeshift accommodation on an old ironing board....5 people. Finally, after a long wait, the waitress arrives (the only person who survives due to kindness and friendliness) and tells us that some dishes are no longer available. We fall back on everything else disappointing from the starters to the first courses. Not even a modest mixed fried dish is Sava. Coffee and a bottle of pigato. The bill was 50 euros per person. For what we ate and the mix-up that occurred, it was a real theft. They won't see us anymore .
