20/08/2025: RESPONSE TO THE RESTAURANT OWNER:
Point 1: I think you're remembering very poorly, given that there weren't four of us and, more importantly, as I wrote in my review, we had lunch, not dinner.
Point 2: Criticism should be accepted in order to improve; it's a good thing to do in general in life, especially if you work with people.
Point 3: But who goes back there!? There are so many great places in Spello, where you can find good food and, at this point, I have no doubt, also good manners.
This rating is mainly based on the treatment I received. The food is good, in fact, nothing extraordinary, but good. But if I stop at a restaurant, I expect not to be "politely" asked to leave after my last bite.
Outside the restaurant, along with the menu with the prices—which aren't cheap, but after all, you can more or less know what the bill will be—they should state that you should eat quickly to free up the table.
I understand that this is a busy tourist season, but in delightful Spello you can find the same or better quality, combined with the opportunity to enjoy a well-priced lunch without having to get up still chewing.

15/07/2025: We spent 4 days in this special place. My partner and I can only say thanks to Jacopo, Luciano, Estela, Valentina and Elvira for their availability, kindness and what can I say? Arriving in this place is like touching the sky with a finger. I recommend it to anyone who is looking for a bit of peace and serenity within themselves. Unfortunately it didn't last long, but what you have transmitted to us is worth a lot. A pesto

16/08/2025: A small but quaint place, with a few tables both indoors and outdoors. We ordered an appetizer to share and three first courses: the quality of the dishes was good, but the taste was unimpressive. Unfortunately, the kitchen was poorly organized: despite arriving and ordering before other tables, our dishes arrived very late. Furthermore, my wife was served first, leaving our daughter without a plate and forcing her to wait even longer. The price was fair (€55 for three, including an appetizer and two bottles of water), but the service could be improved.

24/06/2025: We ate outside, we were served by a really nice waitress, Gaia I think.
We ate well in the beautiful little square of Spello and then we took a walk in the really really cute little village.
22/06/2025: We went for lunch on the day of the flower festival and we ordered a crescia and some bruschetta and a bottle of water and I noticed the owner scolding the waitress because we had taken few things but since the menu included what we ordered I don't see the problem anyway if I were to return to Spello I will avoid going there again I was disappointed 😞

21/07/2025: Beautiful village, clean and fresh apartments, and the staff is extremely kind and helpful. There are two lovely pools to relax in, and the restaurant offers excellent and varied dishes. Breakfast is also very varied and plentiful. It was a truly lovely stay, albeit unfortunately short.

08/08/2025: A unique experience, feeling at home, yet in the heart of Umbria.
Alberto pampered us in every way.
The property is gorgeous, meticulously maintained, and strategically located for visiting various cities and villages.
The restaurant offers traditional Umbrian cuisine, always with a focus on children's needs.
The large green spaces and swimming pool make it a true haven for a "classic" beach vacation.
17/07/2025: It was supposed to be an Agricampeggio but instead the camper spaces seem like parking spaces with electricity, you can't unload either the black or grey ones, plus to be able to use the services you have to buy the swimming pool package for €12 per person, the price of the Agricamper is €18 + €5 for 2 people... Luckily the manager, rude by the way, was a camper... In conclusion, a place to avoid.

30/07/2025: A symphony to be tuned.
It's always difficult to write a review when the experience doesn't quite resonate. At Trombone, the overture is promising: the courteous and helpful staff plays their score with good rhythm, and the dishes arrive on time. The terrace is a pleasant setting for a summer dinner, but the interior, unfortunately, lacks light and atmosphere, appearing a bit too "minor-key."
The restaurant's soundtrack is provided by a small speaker that fails to evenly distribute the music, leaving the room in a dissonant silence broken only by unpleasant notes—a jarring detail, especially for a restaurant named after a wind instrument.
Culinary-wise, the dishes are executed with reasonable technique but without any melodic flourishes. The cooked vegetable appetizer and baked potatoes are neutral, while the truffle pasta, though elegantly presented, lacks the expected crescendo of flavors: the truffle doesn't stand out from the crowd, and the lack of salt makes it necessary for the diner to directly intervene with salt, pepper, and oil to re-tune the flavors.
A decidedly off-key note? The appearance, between one movement and another, of a cat, strolling slowly between the tables. A curious detail for some, but for others, it could disrupt the harmony of the experience.
The menu, as other reviewers have noted, offers a rather limited selection: a choice that, if well-orchestrated, could become a strong point, but for now it feels more like a timid solo that doesn't dare.
This review isn't meant to be a scathing judgment, but rather an invitation to re-tune. The basics are there: the score can work, it just needs a few more rehearsals, a more inspired conductor, and, above all, the will to transform a rough draft into a memorable concert.

For the record, I've never ordered gluten-free pasta, but I've ordered something vegan.

The terrace is truly stunning and the view enchanting. The very kind and helpful waitress always served us with courtesy and kindness.
We absolutely loved the arrosticini with roasted potatoes and the flavorful cuisine at this restaurant!
Finally, I personally loved the baked peaches! A simple and authentic dessert with truly incredible flavor!

05/06/2025: Noi abbiamo prenotato solo una notte e ci bastava. Peccato perché è un luogo antico bello con tante possibilità e inoltre una panorama con una terrazza strepitosa ma a noi sembrava mal gestito. Si vedeva la mancanza di cura e purtroppo in reception non siamo trovati proprio bene per conto della mancanza di preparazione dello staff. Una era proprio disinteressata. Ma la cosa ancora più deludente era lo spa. Puzzava di sudore nel bagno turco...e certe situazioni ci hanno portato a capire le pulizie non erano al massimo. La sauna era tiepida e l'aria era come in cantiere. Non tutte le opzioni della vasca idromassaggio funzionavano.
Il motivo per le 3 stelle anziché 1 era grazie al ristorante. Il cibo era delizioso e il vino una sorpresa molto gradevole - prezzi giusti. Servizio ok, staff in training. Il responsabile di sala era gentile e disponibilissimo.

08/10/2024: Encontramos este pequeño sandwich y bar de vinos por casualidad al caminar a la cima de Spello.
Lo bueno:
+Sandwiches increíbles
+Sabroso pan de cúrcuma
+Grandes opciones de vino
+Opción vegana (para pareja)
+ Encantador anfitrión - ella nos dio opciones veganas para ir a cenar por la noche.
No tan bueno:
Nada.
Conclusión:
¡Evite las trampas turísticas más abajo en Spello y camine hacia arriba y visite In Urbe para el almuerzo!
11/09/2024: Locale piccolino, ma super carino. La ragazza è stata molto accogliente e disponibile nel descrivermi i vini e le birre del proprio territorio presenti nel listino. I panini sono alternativi, gli abbinamenti particolari, davvero deliziosi!

21/10/2024: Una visita a este restaurante fue parte de nuestro Tour Intrépido organizado. Incluía cata de vinos y muestras de comida local. Soy un no bebedor por lo que apreciamos los fabulosos sabores del aceite de oliva, el vinagre balsámico y los alimentos servidos. El propietario también amablemente me proporcionó un capuchino gratis - muy generoso. El personal era muy amable y atento. Un entorno tranquilo y sombreado - muy recomendable!
21/10/2024: Hoy asistimos a un almuerzo y cata de vinos en este hermoso lugar. Incluyó comida realmente encantadora y un discurso muy informativo y experto sobre las características y el maridaje de los diversos vinos que disfrutamos. El entusiasmo con el que se dio la información sin duda se sumó al disfrute.
Además de las diversas variedades de vino, nos educaron sobre el aceite de oliva local y el delicioso balsámico de más de 20 años.
Yo era el único vegetariano del grupo, pero mi berenjena era igual de deliciosa que los platos de carne parecían ser para los otros miembros del grupo.
Spello es una hermosa ciudad pequeña. El restaurante está a parte de la colina, un paseo fácil, rodeado de edificios antiguos.
Todo muy recomendable!
