09/02/2026: We took advantage of the 50th birthday promotion for two, which included dinner and accommodations. The location is beautiful, charming, and peaceful. Unfortunately, it was foggy, but the atmosphere was still very charming. Before dinner, we visited the culatello aging cellars, where the entire process was explained to us. Dinner included an aperitif, four courses, dessert, and a petite pâtisserie. The package included wine pairings, featuring local wines of their own production. The service was impeccable, as you'd expect from a Michelin-starred restaurant. The menu was fantastic, as the photos show. We stayed in the "Emilia" room, a spacious and welcoming room with high ceilings and exposed beams, decorated in a milk/cow theme.
25/01/2026: We stayed for two nights in this fantastic historic residence!
Hotel: beautiful, authentic. The historic common areas are breathtaking. It feels like being in another era. The room is comfortable, spacious, and full of amenities. The bed and the room temperature were perfect. From our viewpoint, we could see the peacock house, and we loved it.
Restaurant: we tried both... the ancient Pallavicina courtyard has a fantastic menu, and every dish was rich in flavor and history (we tried the 15th anniversary menu). The dining room is beautiful, and the tableware is rare to find. Perhaps the only downside is the service... extremely slow, but I think there was a mix-up because we waited an hour between the arrival and the first course. There are many young people practicing, so you have to be patient because overall, it's a great experience.
The Culatello Museum and the cellar with the culatellos maturing are the icing on the cake!
A very positive experience, a very high-level, elegant restaurant (and with deep roots, without improvisation).
The Hosteria del maiale, on the other hand, offers excellent local dishes and a small shop.
Spending two days in this establishment allows you to better understand this rugged yet enchanting area and the history of this family over the years. Come without hesitation.

28/06/2025: Ristorante molto accogliente ed elegante con personale gentile e discreto. Il culatello (24 e 36 mesi) veramente speciale ( da bis) e tortelli di erbette con burro fuso e parmigiano ottimi così come il dolce Patrizia per completare in dolcezza un ottimo pranzo.
Grazie ad Alessandro per la gentilissima accoglienza per un pranzo veramente molto apprezzato da ripetere senza alcun dubbio.

21/02/2026: Always a guarantee. Everything is good, nothing excluded. Clear choice of daily menu and à la carte. If you like Fortsna del Taro as an aperitif: a great wine that is only produced in the area. Always a must when passing through Parma.
P.S. The bread is a sublime delight; I'd say it's the best in the last three years. But where is that baker? Even the bread itself tells the story of a restaurant's quality.

The pizza was really good. You know when you eat something and hope it never ends? The semifreddo dessert with a sbrisolona base was amazing. That was my experience.

01/03/2026: I've known this trattoria for 20 years. I knew the legendary Signora Miriam, a woman from back in the day who was always a pleasure to chat with. Her lasagna spoke volumes, you could smell it from outside. When I'm in the area, I love stopping for lunch, once with the whole family, now alone with my husband. I should start by saying that it had been two years since our last visit. We had a quick lunch of culatello and giardiniera, and then I headed back to Switzerland. Yesterday, however, we wanted to enjoy the day, and we sat down at 12:30. The place is still the same, the garden is closed for the winter. We ordered an excellent Lambrusco, an excellent culatello, and the giardiniera was very good but paltry. We asked for seconds because it wasn't even enough for one person. My husband chose a first course, anolini pasticciati, a ridiculous portion; I chose a second course, baked veal tip for €25, a slice of meat that was practically nothing but fat, with no side dish. I asked for a change of course, and opted for the chicken cacciatore. I get a chicken covered in soft peppers; I don't like peppers and try to eat some meat. No one warned me about this strange combination. The side dishes are separate: 4 baked potatoes for €7 and spinach sautéed with Parmesan for €7 (good). To finish, my husband asked for a small piece of Parmesan for €6 and 4 slices of salami for €9, just to finish the wine. Very disappointed, we decide not to order dessert, certainly not even the zabaglione, and the old-fashioned kind. Two coffees and two house digestifs. We ask for the bill: €163.00; the €23 wine didn't affect the final bill. Very disappointed, we get up and continue the journey. I sit in the car and reflect, because when the main characters pass away, most of the time those who remain don't carry on that old thought, and so I ask myself, why go on?

24/03/2025: Mangiare al Cavallino Bianco è sempre una esperienza bellissima perché è come ritornare bambina e ricordare certi sapori che ormai è difficile trovare. Il culatello il prosciutto, lo strolghino , la spalla cotta, la loro giardiniera sono piatti superlativi, per non parlare dei tagliolini al burro di Vacche Rosse con il culatello , i secondi ricchi di gusto,I dolci ottimi insomma provare per credere! La gentilezza del proprietario è innata e quindi ti senti veramente a casa di amici. Non vedo l’ora di tornarci.

13/07/2025: Locale nel centro di Fontannellato a pochi passi dalla splendida rocca. Locale, almeno all'esterno non particolarmente attraente.
Cucina del territorio con menù limitato. Abbiamo preso torta fritta con affettati, tortelli di asinella e tortelli di culatello, sorbetto. Tutto buono, nota speciale per i tortelli di asinella che abbiamo trovato ottimi. Prezzo onesto
18/05/2025: Ubicato nel centro del borgo, a due passi dal castello, la location è gradevole. Abbiamo pranzato nella sala rossa, con soffitto alto, ben arredata con uno stile che richiama un bar di teatro.
Buono il culatello, ma i tortelli ai funghi molto modesti, con un ripieno quasi insapore, conditi con funghi tritati duri e gommosi, dal sapore incerto, tutto molto sapido. Tra l’alteo il piatto era freddo e i tortelli appena tiepidi. Disattento il servizio.

16/07/2025: Trattoria nel centro di Fidenza, grande atmosfera, piatti tipici della tradizione Parmense e Piacentina. Salumi di qualita' eccezionale, gnocco fritto sublime, molto leggero. Ampia scelta di primi e secondi piatti, dolci buonissimi: la migliore torta "sbrisolona" mai assaggiata. Il titolare disponibile a spiegare tutti i piatti, cucina a vista impeccabile; vedere "tirare" la pasta dei primi piatti in diretta e' qualcosa di inusuale ma di molto gradevole. Consiglio a tutti di provare: un'immersione nella cucina dell'Emilia.

O prato de degustação de Salumi e a Torta Fritta são maravilhosos, peça também o pimentão Agridoce, feito pela Chef dá Trattoria
