13/01/2026: I'd been wanting to dine at this restaurant for a while, and finally, in early January, I did. The location is simply fantastic; dining 18 meters underground is truly unique. Despite the excellent quality of the ingredients and the simply prepared dishes that make you savor every single ingredient with every bite, I was quite disappointed. From a location like this, you expect more. Unfortunately, the service leaves much to be desired; the staff isn't very well trained; they lack the basics. They can't bring out the main appetizers and forget about individual dishes; they can't wait for water after having already requested it several times; and they can't give you a menu from which you can't order almost anything because it's winter and that's a summer menu. These are just some of the issues we encountered. All in all, among the staff, we found a young man who tried to resolve the various issues. Expectations were very high. I'm sorry to write this review, but I hope it helps us improve. I think with a few extra tricks, you can truly become the best. Ahhhhh, I forgot about the Milanese placemats, NOOOOOO.

13/01/2026: The restaurant is nestled in some truly beautiful grottos. Delicious dishes, always helpful staff. Prices are reasonable. Among other dishes, we ordered a delicious first course: cavatellini with yellow cherry tomato sauce, pezzente sausage (typical sausage), and cardoncelli mushrooms. Excellent.

02/03/2026: Elegant venue suitable for couples. The owner is welcoming, the food and service excellent. Highly recommended, we'll definitely be back.

01/03/2026: I don't judge the delay; it was Saturday, and I can understand the pressure and the high number of orders. I'm always on the side of those who put in the effort and work, so I'm not giving it a star. That said, the pizza was a disappointment; the sauce was obviously raw and the dough was truly terrible. I only ate the edges because I was hungry. It's a shame, because being a pizzeria, that becomes the key aspect. The place was very chaotic, which I don't attribute to the management, but rather to the loud noises that got louder and louder, and when we repeatedly asked for the music to be turned down or turned off, we were almost ignored. A little bit of customer service would have made a difference, at least in this regard. I doubt I'll ever change my mind because I'll never set foot in this place again, but I sincerely hope they can learn from this review and improve. Good luck.

23/08/2025: The absolute best bar in Salento. Ideal for a sandwich, the products are of the highest quality, and the ingredients are unmatched, something you won't find anywhere else. Excellent service, expertly prepared drinks, and a wide selection of top-quality options. Special thanks to the two owners, Silvia and Vincenzo, who maintain a high level of commitment and dedication to quality. Returning to them is always a pleasure, an unmissable stop that makes us appreciate this wonderful land even more.

30/12/2025: A wonderful place, fantastic pasticciotto (especially the Crema e Limone). A dessert you'll remember for a lifetime. Delicious gelato, too, and a pleasant setting among the trulli.

08/03/2026: IT IS NO LONGER THE FAMOUS BAR DA PAOLO OF THE PAST, while you are having an aperitif or breakfast, there is an invasion of pigeons that walk under the tables, breakfast is expensive and aperitif is very expensive, the calzone like the pasticciotto pugliese are no longer as good as they once were, TO AVOID There are many superior ones, clean and with an excellent balance between price and quality

09/04/2026: We were there on Easter Sunday and had a wonderful time sitting outside because the weather was nice. We ate typical Mediterranean dishes, all meat-based... the staff were very polite and kind, even the owners. We will definitely be back on beautiful summer evenings. Thank you for everything.

28/02/2026: I'm sorry to say that my rating has changed. I'm sincerely very sorry, but you can't wait 1 hour and 15 minutes for two takeaway pizzas starting from 7:30 pm to 8:45 pm and they still had to make them.

23/02/2026: I'm sorry to leave one star but before writing the review we called the restaurant which was very rude on the phone, the pizza was supposed to be Norcia and stracciatella and instead I received this

10/09/2025: Overpriced, bland, soggy veggie panini (€7!!!). Toilets that no one would want to use, and to top it all off, someone was loudly unscrewing screws right in front of us, even though we were the only guests in the area. My recommendation: Bring a picnic.

21/03/2026: We had dinner at this truly charming place, with the staff ready to welcome you at the door. The menu is set and includes a selection of appetizers, a first course, a second course, and dessert. Drinks are not included. The appetizers are delicious and beautifully presented. The vegetable tempura is good, the cheeses are excellent, and the veal with tuna sauce is excellent. Paccheri with tomato sauce and Colonnata lard are simple and flavorful, served in a baking dish to share. The second course, suckling pig with mashed potatoes, is also delicious. For dessert, there's chiacchiere with tiramisu cream. The atmosphere is very pleasant, especially near the fireplace.
