06/09/2025: Mine isn't appetite, it's a true hunger for simplicity, beauty, and harmony. In gastronomy, reaching the essence of simplicity is the most difficult feat possible, because simplicity lies in the use of a few good raw materials and a few, but expert, techniques. And Filippo does this at Mater. But there's something even more difficult. In life, as in cooking, we seek the "landscape," but we know nothing about "nature." Director Ermanno Olmi said that you can't love a forest by thinking of it only as an oxygen factory. Do you want to love a forest? Kneel down and look at it closely. Filippo and Marta go to the Camaldoli forest in their free time, kneel down, look closely, listen with all five senses, and dream of a dish. Many chefs are passionate about what they do, but Filippo's passion is imbued with a strength that runs through him, which isn't simply the strength of the ego, but something beyond the ego. 02/10/2025: It's not the first time, and it's always a positive experience. The shank was fabulous, and the beer-infused mascarpone was delicious. The pizza, which I've tried before, was also excellent. The Resina beer was delicious.

29/09/2025: We stumbled upon this place by chance, after a snowshoe hike, and we were beyond thrilled. As soon as we entered, we felt right at home; it's a very warm and welcoming place. The very courteous staff accompanied us to our table and took our order shortly thereafter; afterward, they were a bit absent, but that was because the place suddenly filled up all at once. We had a mixed appetizer of crostini and cured meats, and ravioli with meat sauce and mushrooms... Everything was delicious. For dessert, we had chestnut fritters that melted in your mouth. You could tell the food was all authentic and high-quality. Congratulations 👏

21/09/2025: Located just above the campsite of the same name, the hotel has its own restaurant with a menu featuring exclusively local specialties: truly excellent cured meats and cheeses, game-based first courses including wild boar, venison, duck, and even mushrooms, another typical local product. The first courses feature homemade pasta shapes such as passatelli, pici, strozzapreti, and tagliatelle, all made exclusively with egg dough. The second courses also feature game, with generous portions and bursting with flavor! I've never found a restaurant that serves such a generous amount of grilled duck! For side dishes, we can find restaurant classics like salads and French fries, except for the fried porcini mushrooms, which aren't listed on the menu but can be made in portions upon request, fried vegetables (excellent), and cannellini beans (very flavorful). Desserts are generously portioned. The menu also features pizzas, which, unfortunately, I haven't had the chance to try yet. The service is excellent; the waiters are friendly and accommodating, making guests feel immediately at ease. Recommended for both group and more intimate dinners. Excellent prices for the quality and quantity offered.

28/09/2025: A pleasant restaurant with plenty of outdoor seating. Everything is very cozy with pleasant people and in a beautiful location with an incredible view of the countryside crowned by a beautiful castle. We were only here for a drink; we didn't try the food. Next time, for sure.

10/10/2025: A delightful place and a top-notch venue! When we're in the area, a stop is a must. The schiacciate, the various large plates, the desserts are excellent... in short, everything is fantastic, just like the people who work there, who are super friendly, kind, and welcoming. The prices are reasonable. I could write an essay with endless praise. We returned in August 2025, and unfortunately the service has changed (self-service), but the staff and the quality of the products served are still excellent.

05/10/2025: Returning after years, we found the same quality. High-quality ingredients, such as the excellent meat, and seasonal products like the delicious porcini mushrooms. Excellent value. The rustic and welcoming atmosphere of a typical Tuscan trattoria. We'll be back for the pizza, because there are few places where it's still cooked in a wood-fired oven!

18/09/2025: A very pleasant surprise. Excellent restaurant, competent and friendly service! Just a few minutes from the Camaldoli Monastery. It's not very noticeable from the road, but after climbing a few hundred meters, a large parking lot opens up and the restaurant is completely surrounded by greenery (several walking trails also begin here). The Pappardelle alla Cacciagione (game-filled pappardelle) are a must-try...sublime!!

28/07/2025: A beautiful mountain hotel in the Casentinesi Forest Park, nestled in a beautifully restored small village. Managed with great kindness and cordiality, with particular attention to respect for the environment and its guests, it offers a delicious breakfast, some of which is freshly prepared. A swimming pool and parking are also available. A truly enchanting place.

27/06/2025: Stayed for 4 days and had a great experience, everywhere was spotlessly clean, great service from the staff. No aircon in the room I had, so if the weather is warm be prepared.

03/10/2025: I asked in advance for only wholemeal bread for breakfast because I can't have 00 flour, they told me that I have to buy it.... Let's hope it's not all like that 🙂‍↕️ I'll let you know

21/09/2025: We spent a night at this inn while visiting Camaldoli. The room was simple and basic (no TV, but I appreciated that), the bed was large and comfortable, and the bathroom was clean with a large shower. We had a great time! Breakfast included excellent desserts, and dinner was delicious. The polenta with wild boar was excellent, and the tagliatelle with mushrooms were also delicious! I hope to return one day. Melania
