01/12/2025: A small Roman restaurant well worth a visit. The atmosphere is simple and welcoming, and the service is friendly without being intrusive. I started with some truly excellent mozzarella in carrozza: fried to perfection, crispy on the outside and stringy on the inside. This was followed by a well-balanced Gricia, flavorful but not heavy, with a creaminess that shows tradition is respected. The dish that won me over, however, was the coratella: impeccably prepared, intense yet clean in flavor. A must-order. The beans with pork rinds were also delicious, a rustic and authentic dish, just as it should be. At the end of the meal, the complimentary bitters were the icing on the cake: a gesture that is always appreciated and speaks of genuine hospitality. In short, Roman cuisine done right, sincere and well-executed dishes. I will gladly return.
