08/04/2026: We visited Chiostro degli Scolopi and the experience was excellent in every way. The quality of the ingredients is top-notch, with great attention to local, zero-mile products. The homemade breads are among the best we've ever tasted, as are the fried meatballs, simple yet perfect. The artichoke puree and crispy crumble, enriched with a high-quality olive oil, are also excellent. The sagne torte with free-range rooster ragù deserves a special mention: handmade pasta and authentic flavors. The beef tartare is fresh and well-balanced. The absolute highlight is the steak: over 1200 grams, presented and prepared in front of the guests, cooked to perfection and accompanied by a selection of salts that further enhance the meat. Impeccable service and an extremely kind and helpful owner. Highly recommended for those seeking Salento tradition with an innovative twist.

07/04/2026: We dined here on Easter Monday. We only realized afterwards that many families would be eating in the restaurant on Easter Monday, rather than in the evening. We had reserved in advance for the evening. Despite the fact that Antonio and his team had been busy all afternoon, they still took the trouble to welcome us. We were the only guests and were spoiled culinarily with homemade bread, focaccia, and a delicious amuse-bouche featuring very tasty aubergine with a lovely, firm texture. The spaghetti al noci was top-notch, as were the osso buco and the lamb shanks, all enjoyed with a glass of red wine from Manduria. We declined dessert. 01/03/2026: I was there for the first time a few years ago, and since 2025 I've already been there 5 times, so it means something's working well. 🥳 Lovely atmosphere both in winter and summer, wide selection of pizzas (including gluten-free), grilled meats, and desserts. Personally, it's one of the best pizza doughs, not too salty and easy to digest. Excellent quality and location with nearby parking. Ideal place for all events with friends, family, and small/medium-sized ceremonies. I'll definitely be back, thanks to all the staff. 👏🏻

Pericle also knows how to recommend dishes perfectly, making you feel immediately at ease and enjoying his wonderful dishes. The atmosphere inside is cozy and comfortable, and in the summer you can also eat outside in the square, where you can admire the beautiful historic center of one of the most beautiful villages in Italy: SPECCHIA. I highly recommend it and would love to return 👍👍👍

08/12/2025: It's one of the best restaurants I've visited in southern Salento, where I've always found fresh fish and meat, at exceptional prices. Fiorella, the chef, is one of the best; I've never seen such an exceptional chef, both in terms of quality and quantity. Federico, the head waiter, is incredibly kind and joking with people, and offers exceptional food recommendations.
