07/04/2025: Locale accogliente nel cuore della Volterra medievale...gentilezza pulizia e professionalità sono le colonne su cui il don beta poggia le sue basi... Lo chef Mirko , un vero personaggio, propone un menù con diverse varianti. Qui si può accarezzare la tradizione con la zuppa o la trippa alla volterrana , vere leccornie.I fantastici taglieri di affettati e formaggi, i pici in tutte le salse.. fino ad arrivare alla regina incontrastata ...la carne ... tagliate ,filetti ,con funghi, tartufo , scaglie di grana e così via ... pizza ....e anche una cucina attenta anche alla celiachia, anche il glutenfree è da elogiare...Ma veniamo al dunque...oggi io e la mia compagna siamo partiti apposta per una vera abbuffata culinaria di pesce e riso e verdura ...in poche parole una magica paella.... che dire prima ci ha rapito e stregato gli occhi poi ci ha fatto sognare con il gusto ...non possiamo che ringraziare lo chef e tutto il suo magnifico staff per questo viaggio culinario che da valencia, ci ha fatto toccare Madrid con un dito , volare sulla rambla a Barcellona ,per riportarci infine a Volterra veramente appagati e soddisfatti ...grazie di cuore ...consiglio a voi tutti di provare il Don Beta...ne vale la pena ...

Chef Mirko, a real character, offers a menu with different variations. Here you can caress tradition with soup or tripe Volterra style, real delicacies. The fantastic platters of cold cuts and cheeses, pici in all sauces... until you get to the undisputed queen... meat... slices, fillets, with mushrooms, truffles, flakes of parmesan and so on... pizza... and also a cuisine that is attentive to celiac disease, even gluten-free is to be praised... But let's get to the point... today my partner and I set off on purpose for a real culinary binge of fish and rice and vegetables... in a few words a magical paella... what can I say, first it kidnapped us and bewitched our eyes then it made us dream with the taste... we can only thank the chef and all his magnificent staff for this culinary journey that from Valencia, made us touch Madrid with a finger, fly on the Rambla in Barcelona, ​​to finally bring us back to Volterra truly satisfied and contented... thank you from the bottom of my heart... I recommend you all to try the Don Beta...it's worth it...

14/04/2025: Beautiful former farm place, very fresh breakfast with sweets but also savory if you want, and I recommend eating there in the evening: I ate pici handmade by them with wild boar but they also do a lot of grilled meat and Florentine steak obviously. All with excellent prices!
11/04/2025: Very good portions and affordable prices. We ate the pear carpaccio with pecorino and it was really delicious. As well as the pici con ragu di cinghiale and tagliatta both very good! Together with one dessert we payed around 50€.

27/04/2025: Very central place in one of the streets between Palazzo dei Priori and the Roman Theatre. I had some excellent pici carbonara and a glass of Chianti. They also have some seats outside.
27/04/2025: We were rather disappointed with the 4 pizzas. They seemed thawed. Too bad to come to Italy for that. The service is very correct and courteous but there was a cold and heavy atmosphere.

30/01/2025: An elderly gentleman who makes pizzas in a wood-fired oven and makes them in the pan that any grandmother at home uses, you can't call me pizza for 2 reasons: 1 you can't taste the flavor and crunchiness of the stone heated by the embers, it's 2 because they make the pizzas so small that in real pizzerias they're baby and in the end they cost too much for their quality, I completely screwed up.

17/04/2025: Service was friendly, portions are generous, went in for a pizza... very tasty ... less then 20 minutes later son vomitted his pizza and my wife and I had a case of bad diarhea from Kerala an hour later.. no further comments... when in Volterra i will simply avoid and cannot recommend..
17/04/2025: We visited this restaurant for lunch. The service was good and friendly. Pizza was generous, and be honest, tasty. But, in 20 minutes after lunch, our son vomited, and an hour later, my husband and I got problems with our stomach. Very upset experience.

26/04/2025: It’s simple: RUN AWAY!! Passing through Volterra on an Easter Monday with a large number of tourists, we made the mistake of choosing the first restaurant where we thought we saw places available, without taking the time to read the reviews first. Quickly a first doubt: the waiter tends to offer us a table outside when we asked him to sit inside. “Don’t worry, we’ll lend you blankets so you don’t get cold.” We insist on having lunch inside, he seems disappointed. We will understand later why by reading the opinions of Internet users: the loan of blankets apparently costs money. Next: we selected this place because it looks like a pizzeria. In the street, a poster details the pizzas with supporting photos. But once seated at the table, we are presented with menus only with rather expensive dishes. In reality, the restaurant does not offer pizzas at every service, but they naturally avoid specifying that. Some customers already seated at the next table had the courage to leave once they understood the subterfuge (a name probably more appropriate than “refuge” for this place). We should have done the same. So here we are with an uninspiring menu poorly translated into English (“stek”, “mashrooms”, etc.). We end up ordering lasagna by default. In the meantime, they bring us bread. Or what's supposed to be bread. In any case not today, and probably not even yesterday, it’s so hard! Then a lot of waiting, but I could have suspected that: from my seat, I had a view of the kitchen where I was able to observe an employee take almost 20 minutes to prepare a simple charcuterie/cheese board. We still ended up being served 4 dishes of lasagna, generously drizzled with olive oil (to soften the dough which is also not new? Maybe...). Needless to say, we didn’t have the idea of ​​ordering desserts. But even paying the bill requires patience. Succeeding in intercepting a server that deigns to take care of you is a feat. I end up catching one of them with a glance, who has no choice but to come and edit the bill... before being yelled at without restraint by an older waiter. You don't need to be bilingual in Italian to understand that he is criticizing her for taking the initiative to take care of a customer (!!) when her role is simply to prepare the drinks. With his head down, he returns to his business... but so does the older waiter, who therefore leaves me stranded, waiting for our "assigned" waiter to eventually return from I don't know where to take care of the payment. The experience is so unpleasant from start to finish that, when you finally leave the restaurant, you have a strange feeling of freedom again. What a shame when you know that there are plenty of other good restaurants nearby to enjoy good Italian cuisine. So, don't waste your time here! As for us, we have sworn to ourselves from now on to systematically read the opinions of Internet users before choosing a restaurant...

02/12/2023: La cecina più buona e digeribile della Toscana! Premetto che amo la cecina ma in tutte le pizzerie Versiliesi mai trovata una cecina così bassa, ben cotta e digeribile! Vale la pena tornare a Volterra per mangiarla! Top! Simpaticissimo il proprietario! Grazie Laura e Alessandro
30/07/2023: Unfriendly and unprepared staff, no foreign language knowledge, avoid at any cost. I ordered two pizzas, and I was told that it will take 10 minutes until they are ready. They asked for upfront payment, of course. After 15 minutes of waiting I was told that it will be another 5 minutes. After 30 minutes I reminded one of the staff members who took my order that the wait takes longer than what was promised. The staff then got angry at me and talked over my head in Italian. I also felt some verbal aggression targeted at me, but as said, I can only assume because they talked in Italian. In the meantime they served pals of theirs instead of taking care of my order. After 40 minutes of waiting I was offered my money back or another 5 minutes waiting. As I lost lots of time already sitting in a their very bad and smelly environment instead of sightseeing with my kids, I said I’m fine with another 5 minutes. After 45 minutes of waiting time they started to bake my pizzas. The end result tasted OK, but definitely not worth the money or the time. Shame on the staff, will not return. Such place does not deserve a spot in in such a beautiful city centre.
