09/02/2025: One of the most beautiful culinary experiences I can remember. I think Sora Maria and Arcangelo calling it a trattoria is reductive even if they have a hundred years of history and success. The environment is very nice, very clean and what is no small thing I appreciated the professionalism of the room attendant Federico who, since my arrival about 15 minutes before the start of the service, advised me on the best route to take. In addition to the classic menu, you can opt for two tasting courses, one for €55 and the other for €65. Fortunately I wasn't alone and so we managed to find the right compromise in order to taste the entire culinary repertoire of Sora Maria. Of note, there are also a couple of rooms with a huge table that are more secluded than the standard rooms. Our journey began with the grilled purple artichoke accompanied with mayonnaise made with lemon and mint egg whites soaked in a fantastic oil, quattrociochi novello oil. The experience in the mouth is pure poetry. The soft artichoke seemed to be cooked at a low temperature and then suddenly you get the smell of embers, the mayonnaise aimed at giving freshness to the dish without invading the freshness and authenticity of the artichoke and then Mister Oil intervenes to give a burst of sweetness to everything. Optimal. Then I tried the angus picagna marinated and smoked in cherry wood with fried artichokes and honey mustard. Never tried before. We explain what it is, in simple words the tail of the bovine particularly used in South American countries such as Argentina and Brazil which without it is marinated as in this case or passed on the grill. Fatty but at the same time succulent cut of meat, in short, delicious, enriched in this case by mustard. Then we moved on to the fifth quarter sweetbreads sautéed in butter and blended with Marsala with fried artichokes and fois gras of the Romans, pork livers with retina with Annurche apples and reduction of Cesanese must. We're not crazy, we know very well that fois gras is purely goose or duck but here they wanted to joke a bit and not take it too seriously, what's important is the result. It was crazy, the meat melted in the mouth, soft and juicy at the same time enhanced by the contrast between sweet and sour of the apple. And then the cannelloni, the main dish of the house without defects, all harmonious, the pastry is a veil that encloses the filling like a magical treasure chest, the San Marzano sweet and tasty as well as the fior di latte from a well-known company from Fiumicino. A dish that they serve to you piping hot, a metaphor for the hands of your hundred-year-old grandmother with a few wrinkles that caress your face, with a love from times gone by. Must try. I think that the strength and success of this place lies precisely in the search for authenticity and the best raw materials and then in turn working with skill and love. Last act trilogy of abbacchio coratella with caramelized onions, leg stuffed with wild herbs and pecorino, absolutely worth trying accompanied with sautéed broccoli. For dessert I had the house tiramisu made with a biscuit originating from Olevano as well as the Valrhona guanaja dark chocolate cube and raspberry ice cream. In addition to all this, sparkling water is added, a glass of digestive wine and last but not least the bread from the Frosinone bakery. What can I say, a fairytale experience, as mentioned before, it was truly a pleasure to see and see with my own eyes that despite the years of history, the quality and refinement of perfection are still the pillar of identity of this fabulous trattoria. Total cost €95.

08/02/2025: A nice restaurant of a certain level, disguised as a trattoria. Very interesting environment in the cellars of the building, rustic village style but service of a high level. Dishes that you wouldn't find in a restaurant, but highly sought after and somehow linked to the territory. The pappardelle with the white "courtyard" ragù are truly remarkable, so I deduce with duck and chicken. An excellent winery with good local proposals especially in the Cesanese area of ​​Olevano and Piglio. On average you spend around 80 euros per person with wine.
