24/03/2025: I chose this restaurant to celebrate my daughter's birthday on the recommendation of friends who are great connoisseurs of Japanese gastronomy. From the moment you enter it's like a dive into Japan, without having to fly for 15 hours! It really feels like walking through a suspended time machine that projects you far back to a Japanese inn where deference, refinement and care for the product are the masters of the place. Both the smiling welcome and the dishes contribute to making this experience at Cuore a true culinary and cultural journey. I highly recommend it!

27/04/2025: LMAO ¿qué coño era esta comida. Conseguimos un ramen de chashu, que usaba una paletilla de cerdo hervida (no nada parecido al chashu real). La sopa sabía a verduras, así que claramente era solo una base de sopa en lugar de un caldo hervido. Tenía un tazón de chirashu mezclado que venía con 2 piezas cada una de salmón, atún y cola amarilla y un par de rodajas de aguacate. El aguacate claramente no estaba maduro (piense super al dente, pero para un aguacate que no es correcto) . El atún y la cola amarilla eran desagradables, el salmón era lo suficientemente bueno. El arroz no tenía sabor y estaba un poco duro. Luego para colmo había un coperto de 5 euros (cargo de cobertura). Lo juro, comimos durante 5 minutos y lo dejamos tan mal. Aún no estoy a 10 pies del restaurante y todavía me río de lo malo que es este lugar a pesar de las buenas críticas.

Francesco, the chef, loves his work and transmits it with energy in his culinary delicacies, bringing Japan here to Italy, the real one, with its flavours, its colours, its stories. Every customer is pampered, listened to, accustomed to dishes that are more exquisite than others, all studied down to the smallest detail. Furthermore, dialogue is encouraged, Francesco puts everyone at ease, talks about himself and his training, explains impeccably how to enjoy his dishes, but also talks about any other topic with customers, treating everyone fairly. Francesco is dedication, elegance, precision, all qualities that are reflected in the restaurant which is also modern, very clean, welcoming and intimate. From the large windows it is also possible to see the Prato fortress in all its beauty. At the reception there will be Gaia, owner of the room and Francesco's helper, very attentive to every customer request, prepared to answer every question and to illustrate the wine and tea lists. Whether it is for a family dinner, a small personal whim or a celebration the reason that might push you to the restaurant as customers, I highly recommend you, a thousand and a thousand times, to try it! 18/04/2025: Francesco is an excellent host, attentive, precise, meticulous both in preparing the dishes and in describing what he prepares for us. The raw material is of the highest quality, the combinations of flavors and textures are an excellent olfactory and tasting experience, there will be the new menu in May. I can't wait to taste it. 16/04/2025: A memorable lunch with an essential menu. All tasty and unique, but also fresh and enveloping with the desserts. Service directly from the chef in a room all for us. Miso ramen: simply perfect. Tonkotsu ramen: white fluid scent, reminiscent of a refined offal broth. Gyoza: mix of extremely tasty meat, for some of us almost too powerful. Interesting and beautiful desserts based on red beans. Excellent green tea. Bill proportionate to the quality. Environment without frills with authentic touches. Welcoming staff.

05/04/2025: What a nice hidden place! We had misk ramen and green tea. It was nice green tea and ramen. I believe they made their own egg noodles , it was nice texture. Good service 👍arigato

20/03/2025: Torno a scrivere una recensione di questa "sushieria" (passatemi il termine 😅) dopo che si è trasferita in pieno centro e aver ampliato l'offerta con i poke e il katsusando. Partendo da quest'ultimo, devo ammettere che ne ignoravo l'esistenza (si tratta di una sorta di sandwich giapponese): mi è piaciuto davvero molto! Promosso pure il poke, ma qui due appunti li devo fare: fra gli ingredienti è assente il Philadelphia e - soprattutto - quelli più "appetitosi" (ovviamente per i miei gusti) sono tutti prezzati extra. 😬 Ad ogni modo, è un posto che continuo a consigliare. 👍

05/05/2025: Definitely the most original and pleasant sushi where I have been, from the outside it does not give the right value, but as soon as you enter the room you immediately understand that it has something more, traditional taste furniture but more placed on a modern design, then the belt is a continuous show with dishes to choose from a multitude of excellent flavors and superior quality, the guys who accompany you to the tables are really good and a welcome surprise for our table the Ferris wheel. Super evening, I will return with other friends!!

30/04/2025: Local located in the IKEA area with on-site parking. From the outside it doesn't look like there could be a restaurant, then you go up a flight of stairs and find yourself inside with a small roller. The restaurant has internal tables and an external terrace, it offers an all you can eat menu also for gluten intolerants where you can serve yourself from the roll in addition to the dishes on the menu. The reservation can also be made from their website and some evenings they hold karaoke singing evenings as we found, which is really nice and innovative I would say. There were two of us, we went for dinner on a Saturday and had a 66cl beer, a glass of white wine and a fairly expensive still water compared to other places. The uramaki are really excellent, they melt in your mouth but a little larger than other places, the meat ravioli really excellent and super full, the salt and pepper prawns good, the salmon carpaccio and the grilled prawns in short, the sour-spicy soup excellent, the crostini with salmon really good, the mini maki super and the nigiri good. It was a pleasant evening, top roller even if the dishes ran out quickly because people who weren't near the roller got up to take more than one at a time, good food, price in line with others, recommended even if some dishes didn't arrive! ps. I'm not so sure if it is accessible to disabled people because there is a disabled bathroom but I didn't see an elevator.

03/05/2025: I came with my boyfriend last summer and we fell in love with this place and especially the food! after a year we came again because we were passing through and this time too everything was super! some new dishes really worth trying! like the salmon and avocado crostini, which are really delicious appetizers, and the grilled ravioli with prawns, chicken and bacon! I highly recommend it if you pass through La Spezia

What distinguishes this sushi from all other oriental restaurants is the craftsmanship and originality of their dishes! (Don't miss the eel nigiri and the mango roll!)
