Beautiful location in the Langhe; it would have been nice to come in the summer to fully enjoy it.
The New Year's Eve dinner was à la carte. We drank several magnums of wine and tried the Piedmontese cuisine.
Entrees: goat cheese and truffle tartlets, savory Bacio di Dama with Parmesan and Bra sausage, and mini giardiniera
Pumpkin, zampone, and lentil tart with Parmesan sauce
Innovative version of veal with tuna sauce
Tajarin with ragù, truly excellent and plentiful
Double-cooked fillet with exceptional potato chips, very tender meat.
Chocolate and salted caramel tart (perhaps the only dish I wasn't sold on this evening)
We were offered mandarins, peanuts, and grapes for midnight.
Along with the coffee, they served small pastries. All for €85 per person.
The staff was fantastic; the young lady was very kind. I would like to come back in the summer.
06/12/2025: A delicious lunch in this elegant setting. Very friendly staff. The cuisine is a true highlight. Dishes prepared with quality ingredients, balanced but never banal, with flavors that showcase each ingredient without weighing you down. From appetizer to dessert, everything flows with impeccable gastronomic coherence. The portions are generous, but above all, delicious.

30/12/2025: First of all, it was obvious there was some issue with the resolution, but I don't know the reason.
The fact remains that we waited 30 minutes to order and then another 40 minutes for the first course. (There were two of us and we'd only ordered the first course.) The dishes were good, however, and the portions were generous. I appreciate that the guy independently applied a small discount at the register.
26/10/2025: What more could you ask for? We ate and drank excellently in a charming setting. (The last truffle was the best 😉🤣)

17/11/2025: What can I say? No breakfast before 8 am, even on Monday mornings, and if you want eggs, it's not until 9 am… The rooms are very poorly soundproofed; you can hear everything that's going on in the hallways, etc. The hotel is outdated… I won't be going back.

28/12/2025: A beautiful and welcoming place, with a pleasant selection of background music. The atmosphere is clean and well-kept, and the staff is friendly and helpful. The cocktails are excellent and well-prepared.
The only negatives: the lack of napkins on the table and the somewhat lengthy order taking process.
Overall, however, a pleasant place for an aperitif.
23/11/2025: Impeccable service, the girl is incredibly kind and professional, the owners are friendly, and thanks also to the chefs who made it a point to change a dish (since I'm allergic to pepper), they prepared a simple but very good fresh tomato dish for me.

18/11/2025: Our time at Castello di Sinio was nothing short of extraordinary. From the moment we arrived, Denise and her incredible staff delivered a level of service that can only be described as top-notch perfection. Every detail was anticipated, every need was met before we even knew we had it, and every interaction felt genuinely warm and personal.
What impressed us most was the meticulous planning Denise and her team handled for our stay. From curated daily itineraries to seamless reservations and thoughtful recommendations, everything flowed effortlessly. It made our trip feel not just relaxing, but expertly crafted.
And then—the dinner. Truly world-class. The kind of meal that makes you pause mid-bite, look around the table, and silently agree that you’ll be talking about this night for years. Every dish showcased local ingredients, deep knowledge, and a chef's touch that borders on magic.
One of the highlights of our entire trip was the pasta-making class hosted by Denise herself. It was fun, hands-on, charmingly educational, and absolutely delicious. Denise has an incredible gift for teaching and making everyone feel like part of something special. We didn’t just learn how to make pasta — we created one of the happiest memories of our journey.
If you're considering a stay at Castello di Sinio, don't hesitate. It’s rare to find a place where hospitality, warmth, expertise, and true passion come together so naturally. Denise and her staff have built something remarkable, and we are already dreaming of our next visit.
20/10/2025: i recently stayed at the Castello for two nights and the Hotel emailed me to ask how my stay was. I responded by email, but sadly never heard back. I was in two minds about posting but as I never heard back please see below my view.
I think that the hotel needs investment if seeking luxury and guests to want to come to the hotel for more than one night !!
There needs to be a slight adjustment in the Hotel attitude which starts with the main gate signs that say no arrival before 2 pm, no outside visitors and then you also find that you can’t use the pool after 2 pm on departure day without being charged extra.
In addition the Hotel has such a beautiful garden area, it’s a shame they don’t bother putting any cushions out and making it look nice other than leaving undressed tables and ones immagination as to how nice it could be.
The hotel needs to create a more welcoming atmosphere with a lunch menu and dinner menu. Seems particularly weird that people will drive up to 30 minutes to other restaurants, but no one seems to want to drive to your hotel for lunch or dinner. You need to ask yourself why......
The pool chairs are particularly uncomfortable and should have cushions and they should be placed out every day automaticaly.
In the bedroom it’s a shame you have to ask for a mattress topper and decent feather pillows in order to have a comfortable nights sleep.
The bathrooms, particular the showers need a little bit of an upgrade. At least there is plenty of hot water.....
No idea if the air-conditioning works but if it doesn’t then that would make a disastrous night sleep in your hotel. Luckily we were able to sleep with the windows open this trip.
The furniture in your reception area is so large that basically makes it almost impossible to sit round without having to put one’s feet on top of the coffee table !
When sitting here people dont want to stare into the kitchen so door should be kept closed.
It’s a great shame, but with 10% more effort maybe it could be 50% better. I would not rush back nor recommend to others based on my experiance. Next time would do more research as there has to be better as a very pretty area of Italy
In the meantime we did have a lovely time touring the Barolo villages, tasting wine and eating in other restaurants.

17/01/2026: Terrible experience.
Some classmates and I just wanted to have a quiet evening. I rarely go out, so for me it was also a special occasion.
When we got to the entrance, the bouncer decided to stop one of my classmates for no real reason. It's clear he's had a grudge against him for a while, and he used this as an excuse to not let us in.
Then the craziest part: there were four of us, a girl and a boy.
We heard him say, literally:
"You can't come in, but if she wants, yes."
Such a selection is ridiculous and disrespectful.
Young people just want to have a quiet time, but then these things happen that make you never want to go out.
And it's no wonder so many young people flee Cuneo: it's a small city, few options, and clubs that, instead of welcoming customers, turn them away with absurd attitudes and senseless selections.
17/01/2026: The bouncers are very rude, arrogant, presumptuous, and UNPROFESSIONAL.
They decide who to let in and who not based on their likeability/status or friendship.
Personally, I hope they ALL get FIRED.
I also hope the owner of this place reads these negative reviews and realizes that perhaps it's best to replace these people, unless he wants to go bankrupt. Otherwise, I hope so.

09/10/2025: Fantastic food and exceptionally good service. You can tell the chef and his wife are passionate about their craft and constantly innovating, without losing their personal connection to their roots. We've been there for the second time, and we were pleasantly surprised again. Highly recommended!
23/06/2025: We stayed in Villa San Carlo as part of an accomodation package with a self guided walking tour in Piemonte. What a wonderful surprise. Carlo was welcoming and informative and asked us if we would like to join him for a banquet that night. Little did we know he is a world renowned chef . We had dietary requirements and Carlo made us a special banquet with printed personalised menus. It was magnificent. The staff were attentive and skilled. The property is lovely and the pool was large, warm and in a lovely garden setting. We love Villa San Carlo.

19/10/2024: siamo stati al ristorante garden per un pranzo di compleanno in famiglia, il posto è molto bello e ben curato .
Il menù ha pochi piatti il che è ottimo però all'atto pratico la realizzazione dei piatti mi ha deluso in quanto non hanno quel qualcosa in più che ti aspetteresti in un posto del genere .
La rolata di agnello sambucano sembrava più un polpettone , risotto con zucca e salsiccia di Bra era un risotto alla zucca con 5 mozziconi di salsiccia sopra ,il flan di carote con crema di acciughe era buono ma piuttosto duro.
Il servizio è da migliorare ,il dito della cameriera nel piatto del risotto non è il massimo.

12/06/2025: Buoni i cocktail presi, serviti con un bel piattino di stuzzichini e patatine da accompagnare l'aperitivo, bello essere in centro a via Roma con un bicchiere in mano e vedere la gente a passeggio,personale giovane e conto nella media.
17/04/2025: Ci siamo fermati per uno spuntino a pranzo ed abbiamo preso dei panini caldi con il pollo. Erano buoni. Servizio abbastanza veloce.

20/04/2025: Conservavo un ottimo ricordo di questo posto, soprattutto per l'atmosfera accogliente e la cucina tradizionale ma diversa dal solito.
I prezzi sono alti, lo si vede già dal menu esposto all'esterno del locale, però siamo a Limone, ecc. e un occhio, lo si può anche chiudere.
I salumi li abbiamo trovati di qualità scadente, in particolare il crudo era "imbarazzante". Il formaggio da raclette con effetto plasticoso, ben diverso da altri che ho consumato a Briançon.
Tartiflette senz'anima, con formaggio non pervenuto, a base di panna.
Insomma, un posto caro per la qualità che offre, peccato essermi rovinato il bel ricordo che ne avevo.
01/04/2025: Ragazzi molto cortesi, simpatici e disponibili. Bagna cauda e tartiflette ottime, unica pecca locale molto freddo e bancomat che non funziona. Ma nel complesso tutto molto buono, anche se i prezzi sono lievemente salati, ma poca roba… Lo consiglieremo e ci torneremo!

31/03/2025: Locale raffinato con una bella vista sulle colline. La cucina di alto livello spazia dalla carne al pesce; tutti i piatti sono buonissimi e dimostrano attenzione nella scelta delle materie prime, capacità nel lavorarle e creatività senza snaturare la ricetta. Il servizio è impeccabile, tutto il personale è gentile e professionale. In sintesi perfetto.
19/01/2025: Ristorante grazioso ed in stile moderno. Belle scelte gastronomiche e buona selezione di vini.
Non si spende poi troppo: menù degustazione senza vini 115€.
Servizio cortese e chef che viene a salutarvi al tavolo.

27/01/2025: In viaggio in Piemonte, dopo aver letto svariate recensioni su questo ristorante decidiamo di visitarlo. Arrivati e accolti dal personale da una calda accoglienza in un locale carino e semplice e molto pulito.
il cameriere che ci ha servito, con aria saputella ( poco preparato ) ci ha raccontato il menù, abbiamo preso un antipasto ( crudo di pesce ) molto buono, un plin ( porzione mignon ) senza un briciolo di sughetto senza sapore, e due buoni brasati.
Al momento del dolce abbiamo optato per un tris di formaggi, dopo aver richiesto un blue cheese assieme ad altri due formaggi, il cameriere sbagliandosi riprende dal nostro piatto un formaggio che ci aveva servito senza che noi lo chiedessimo rimettendolo sul tavolo di servizio con aria strafottente. ( cioè mi riprendi dal piatto una fettina di formaggio già toccata ? )
Una scena raccapricciante!!!

Il servizio… si può fare di meglio, essere interrotti in un dialogo ogni 5 minuti perché devi rispondere alla domanda “ tutto bene signori” o perché devi servire il vino , mi sembra eccessivo. In ogni caso positivo

14/10/2023: PESSIMO, UN TEATRINO RIDICOLO. Ho avuto la pessima idea di pranzare in questo ristorante stellato, ma la mia esperienza è stata assutamente deludente. Il prezzo elevato non sarebbe stato un problema se il cibo avesse retto il confronto. Purtroppo, la cucina sembrava essere stata relegata in secondo piano in favore di un'esibizione teatrale dei camerieri.
Piatti costosi e incomprensibili erano presentati come "arte gastronomica", ma la realtà era ben diversa. Gli ingredienti di qualità sembravano smarriti in una confusione di elementi decorativi. La danza incessante dei camerieri era uno spettacolo inutile che sostituiva la sostanza della buona cucina.
L'unico aspetto autentico di questa esperienza era la delusione. Il prezzo elevato era un insulto, non un indicatore di qualità. Questo ristorante sembra aver dimenticato che il cibo dovrebbe essere il protagonista, non la fuffa circostante. Una beffa costosa che disperde i veri sapori della cucina delle Langhe e prende di mira i clienti che cercano autenticità. Non ci tornerò mai più.
