18/05/2026: I visited Trattoria dei Priori during a weekend in Norcia, and I must say it was one of the most pleasant experiences of the trip. As soon as I entered, I found a simple yet welcoming atmosphere, with that familiar atmosphere typical of true Umbrian trattorias. The staff was immediately extremely kind, always attentive and helpful without being intrusive. I tried the strangozzi with truffle and porcini mushrooms and was truly impressed: generous portions, authentic flavors, and quality ingredients. The lamb was also tender and perfectly cooked. You can tell the cuisine here follows local tradition without unnecessary frills. The homemade desserts were also excellent, especially the custard, which I loved. Another thing I appreciated was the value for money: considering the quality of the food and the quantity, the bill was absolutely fair. It's one of those places where you eat well, feel at home, and want to return. If you're passing through Norcia and want to experience authentic local cuisine, I think this trattoria is definitely worth a visit.
