06/11/2025: Ristorante Underground lives up to its name: nestled in a vaulted stone cellar, it offers an intimate and unique atmosphere. The menu features local dishes with a modern twist, all beautifully presented and delicious. The service is attentive and warm, contributing to a relaxed ambiance. I ordered an excellent pan-seared fish fillet in a crust: the waiter told me it was monkfish, but I think it was actually sea bass. The price is reasonable for the area, especially considering the unique setting and the quality of the ingredients.

27/10/2025: We arrived at the Count's Grotto in the early evening, my beloved and I, seeking relief from that incessant heat. The food served transcended mere nutrition; here, chemistry became art, and the chef, like a modern-day alchemist, made the little things precious. Nothing is greater than the little things.
Without the bitter, however, the sweet isn't so sweet. Even though it was in the sweet that my beloved found a fleeting smile.

22/09/2025: I was alone and ordered a platter even though it was recommended for two, and the waiter rightly warned me. I ordered it anyway, especially since that was all we were eating.
It was excellent, although I'd recommend bringing bread instead of waiting for customers to ask for it. In any case, bread isn't the friselle that make crostini, although they were still good. Above all, I'd add at least two more types of cheese, since the menu offered a selection of cured meats and cheeses, but there was only mozzarella or stracciatella. I'd perhaps remove the mortadella, which I think has nothing to do with Salento. All in all, I enjoyed everything for just €12 for the platter.

We ordered takeout and the pizzas on site. We received a warm welcome.
While the pizza was being prepared, we were given small snacks, which were very good.
The ingredients were freshly prepared, and the pizzas were fresh and delicious.
I'll be back next time I'm in Castro. Thank you.

And no one gets mad if you, even, just order a coffee.
