09/12/2025: A small, romantic, welcoming restaurant with extremely friendly staff. The food is top-quality, with authentic local flavors. Excellent service with wonderful staff: one young lady was very kind in giving my nieces a piece of paper and some crayons to entertain them, and even took the time to put a cushion on their chair. A young man was so kind, he asked us at the end if everything was to our liking. Beyond the good food, it's also the hospitality that makes a place special, and yours is just that. Congratulations, we'll be back.

This is what you experience when you enter A sud dell'anima, a cozy place, elegant in its simplicity, where time seems to slow down to make room for the authentic pleasure of the table. The atmosphere is just right for a lunch or dinner enjoyed in complete tranquility: no unnecessary noise, just the silent dialogue between thoughtful dishes and attentive palates. The journey begins with appetizers that are anything but conventional: the artichoke, the star of the show, captivates with its depth and delicacy; the cod surprises with its balance and precision; while the favetta with lentils is a small exercise in gastronomic memory, harking back to peasant cuisine and elevating it to a cultured gesture. The linguine with butter and white truffle from Murgia is a dish that doesn't seek special effects: it achieves them naturally. Excellent raw materials, impeccably cooked, aromas that precede the taste and accompany it discreetly. The suckling pig, served with an intense and well-balanced reduction, finds the ideal counterpoint in the giardiniera, giving the dish rhythm and character. The finale features three simply spectacular desserts, the kind that force you to forget all moderation: perfectly harmonized textures, sweetness, and aromas, mouth-watering without a trace of remorse. All accompanied by a Valpolicella from Cantine Massimago Marchesa, a choice that confirms a wine list thoughtfully designed with respect for the cuisine. Heartfelt thanks to Ivan and the always impeccable Nadia, discreet yet essential presences, capable of making guests feel not just customers, but an integral part of the experience. Inevitable conclusion: an extremely positive rating. A restaurant that doesn't seek easy approval, but achieves it with skill, soul, and consistency.

14/01/2026: A small, welcoming restaurant with fast, attentive, and friendly service. The cuisine is typical of the Apulian hinterland, with top-quality ingredients and a wide variety of meats. The first courses are new daily specials: try the braised beef ravioli topped with pumpkin and walnut cream and smoked ricotta cheese: amazing. Recommended.

04/12/2025: Small restaurant on a street in the center of Minervino Murge. It doesn't have private parking, but there's street parking nearby. The only indoor dining area is small, with tables arranged fairly close together. The space is poorly heated; even though the two air conditioners were on, they weren't enough to adequately heat the room. The menu features traditional Apulian cuisine. There's a wide variety of meats, while the first courses are the daily specials, which are announced by the very friendly and efficient staff. The house antipasto is also delicious. Prices are very attractive, offering excellent value.
