It's a real experience! Donato truly knows how to inspire. Every time my wife and I go there, he's always ready to amaze.
The homemade bread, the many interesting options, the work behind each dish...everything is top-notch!
The sisters serving are also top-notch, especially Domenica! A must-try!
PS: He pays close attention to intolerances and allergies, so highly recommended from that perspective too!

A very unique cuisine; the chef loves to experiment with leavened products and a few ethnic ingredients. The dishes are truly refined yet still quite generous. I would only improve the table reservation system.

Ristorante Calvi proved to be a true celebration of cuisine, where the balance between solid tradition and the Chef's innovative flair reaches a high level.
The opening was entrusted to the iconic dish that, alone, is worth the trip: spaghetti in bianco with secret ingredients. Its apparent simplicity hides a complexity of unimaginable flavors, a true sensory experience that, like umami, has a surprising delicacy and a memorable impact.
The double cream tortellino was a real heart-stopping experience. This dish literally transported me to Emilia. The pasta, combined with the enveloping creaminess of the "double cream" (perfectly balanced and never heavy), was a demonstration of how the pinnacle of perfection can be achieved in classic cuisine. Truly delicious and comforting.
The meat course confirmed the high quality of the ingredients, carefully selected, ensuring tenderness and a bold flavor.
To round things off, the coffee-flavored leavened cake, the chef's signature dish, proved to be an excellent dessert. A delightful reinterpretation of the Italian panettone, where the softness of the leavening meets the deep, refined aroma of coffee.
In short, dinner at Ristorante Calvi was a complete and satisfying culinary experience. Very satisfied and ready to return!

Calvi is flavor. It's that dish you wish would never end, that forkful that makes you crave another. From appetizer to dessert, chef Donato Calvi expertly crafted his own restaurant concept: contemporary and vibrant, yet respectful of Italian and regional tradition; simple, yet never predictable. The use of ingredients is intelligent and creative, never lapsing into unnecessary flourishes. The welcoming atmosphere, the attentive and professional service, friendly without ever being pretentious, complete the experience. What can I say, if you find yourself in Altamura—or even just in the surrounding area—Calvi restaurant is definitely worth a visit.
Recommended: Grilled beef ossobuco, Scottona steak tartare with ginger mayo, Linguine with red shrimp absolute, Brioche with chocolate chips and gelato. 🔝

We'd been meaning to visit this restaurant for a while, intrigued by the photos of the dishes and the positive reviews. What can I say....a true experience!!!! A very welcoming place, impeccable service, and an open kitchen. Exceptional dishes, combining tradition and innovation, with prices in line with the high quality offered. We'll definitely be back!
