19/05/2026: We had a lovely stay at the Bio-Hotel Kaufmann. The reception was friendly, there is ample parking in front of and behind the building, and a garage for e-bikes. The furnishings are a bit dated, but clean and tidy. Our room facing the garden had a balcony and was very quiet. The breakfast is extensive and delicious. Egg dishes are freshly prepared.

Having enjoyed sushi in New York, Miami, and throughout the Caribbean, I wasn’t expecting to find sushi of this quality in Bolzano, but I was pleasantly surprised. Every roll was beautifully presented, incredibly fresh, and prepared with real attention to detail. You can tell the chefs take pride in what they serve. The fried rice was the only dish that didn’t quite match the high standard of the sushi, but that certainly didn’t take away from the overall experience. I also noticed they don’t offer classics like wonton or egg drop soup, which suggests they’re focused on a more authentic Japanese style rather than a broad Asian menu. What really makes Bambus special is the complete experience. The staff are genuinely friendly, welcoming, and attentive, making you feel comfortable from the moment you arrive. There’s plenty of parking, the restaurant sits in a beautiful riverside location, and the surroundings create a peaceful atmosphere that’s perfect for a relaxed lunch or dinner. It’s also a lovely spot to take a few photos before or after your meal. If you’re looking for fresh, high quality sushi in Bolzano, Bambus is definitely worth a visit. I’ll certainly be returning the next time I’m in the area.
