Chef Bonsignore manages to capture Sicily and bring it to the plate without distorting it, starting with excellent ingredients and crafting them with technique, sensitivity, and great personality. Each dish features carefully crafted contrasts: savory, acidic, sweet, textures, and aromas intertwine without ever becoming unnecessarily complicated. The result is intense, recognizable cuisine, profoundly Sicilian yet far from predictable. The desire to showcase the product, not hide it behind technique, is clearly evident. The quality truly surprised me: I've eaten at several Michelin-starred restaurants that have left far less impression on me. Here, however, there's flavor, identity, and dishes that will leave a lasting impression. If you're passing through Licata, L'Oste e il Sacrestano is one of those places worth stopping for. Kudos to Chef Bonsignore and the entire team: an experience worth repeating without a doubt.
