12/01/2025: Today, for lunch, I tried the tasting menu with four main courses. I found every aspect related to the restaurant "sublime", at the end of the meal I felt it was my duty to thank the owner (Andrea) for the experience I had just had. The level is very high, you can perceive it as soon as you set foot and you continue to perceive this sensation throughout the experience. Without a doubt it is the "best" restaurant I have ever tried, so much so that as soon as I stepped outside the door I already felt the desire to return. FOOD rice wafer with broccoli cream (entrée): pleasant broccoli cream, crunchy radicchio butter (entrée): emulsified with sea water enhances the bread and breadsticks provided red mullet (starting dish): the red mullet (deboned) goes well with the potato cream, while the olives give the required touch of flavor spaghetti with seafood (first course): large quantity of fish inside the pasta, perfect cooking, the sea urchin can be seen and heard a lot, the parsley oil refreshes the fish from the port of Anzio (second course): accustomed to the classic fried fish, I expected crunchiness, but instead I was positively surprised by the softness of the frying. Furthermore, the fish inside was moist and not dry. The three sauces (coffee, pumpkin, beetroot (?)) pair perfectly with the frying. ice cream: cleans the palate of fish, preparing it for dessert under the ground (dessert): excellent meal closure. The pumpkin jam is excellent, the crumble gives the dish the necessary crunchiness SERVICE fast, attentive, minimal waiting between one dish and another. Andrea is already worth the cost of the meal, he is charismatic and entertainer, you can immediately perceive the passion he puts into his restaurant ENVIRONMENT the photos speak for themselves: a renovated former convent. The room in which we had lunch has been completely renovated recently, there is a lot of privacy, no noise, there is no chaos, it is elegant, well-kept, splendid.

16/02/2025: Ci eravamo già stati ed era sembrato abbastanza buono, ma oggi è stato un flop! Quando il locale si è cominciato a popolare il personale è andato in tilt! Mi hanno portato una scamorza pugliese con prosciutto di Norcia che era un tutt'uno al piatto di portata, la tagliata dura e un Limoncello che era alcol e di bucce di limone neanche l'odore. Peccato!

04/02/2025: Premetto che da romana, non sempre apprezzo la cucina romana cucinata ai Castelli, ma la fraschetta da Michele mi ha fatto innamorare del loro modo di cucinare i piatti tipici del Lazio. Si mangia sempre benissimo, con ingredienti di ottima qualità e un rapporto qualità-prezzo ottimo. La fraschetta più buona dei castelli romani, molto di più delle tante fraschette famose di ariccia.

Unfortunately, my margherita wasn't cooked and the tomato just came out of the jar, so every ingredient was left alone. The good dessert. The service leaves a lot to be desired, to get a bottle of water we had to get up from the table and again to ask for the bill. Maybe it wasn't a lucky night!
