27/02/2025: Popular Osteria in the center of Sarezzano The landscape of Piedmont in the province of Alesandria on the border with Liguria is characterized by huge grain and rice fields. Wine only grows in the somewhat steeper hills around Tortona, the Colle Tortonesi. The vineyard called Derthona is still almost untouched by tourism. The small mountain village of Sarezzano is one of the places that presents itself authentically to the visitor. The Osteria and Bar La Rava e la Fava is located on the village square near the church. It is the only restaurant in the town center and the terrace on the village square is always busy at lunchtime and in the evening. The fact that there were no local alternatives to this restaurant wasn't a problem. Because during our visit it turned out that the cuisine was surprisingly good and creative. Our Primi exceeded our expectations: Homemade Spaghetti alla Chitarra Cacio & Pepe with a Pecorino ice cream topping was just as much of a pasta highlight as the Capellini with Colatura die Alici, a raw scampo and bottarga. The anchovy sauce from the Amalfi Coast is considered Italian umami among foodies. After this culinary surprise in the village, we were curious about the main courses - they would also have been a credit to any upscale restaurant: low-temperature cooked, Suckling pig fillet marinated in smoked honey sauce with caramelized Tropea onions and striped bream fillets fried with seafood and a pepperoni-orange cream with black olive powder and taralli (small half-round breadsticks). The inconspicuous village restaurant impressively proves why Piedmont cuisine is so popular with gourmets. We paid an extremely cheap 74 euros for the excellent dinner for two - Happy Italy!
