Upon arrival, we were greeted with warmth and professionalism by the owner. The relaxing and refined atmosphere of the place immediately caught our attention, and we immediately felt at ease.
The variety and freshness of the dishes are simply extraordinary. Each dish was expertly prepared and presented with impeccable aesthetics, highlighting the kitchen team's attention to detail and passion for culinary excellence. From delicate raw dishes to richly flavored first courses, each course was a sensorial journey through the best flavors of the sea.
Particularly memorable were our main dishes. The ravioli were a sublime fusion of freshness and delicacy, with the fish literally melting in your mouth accompanied by an explosion of Mediterranean flavours. 09/03/2024: Nei ristoranti di pesce solitamente si trovano le grigliate, i fritti, i primi coi crostacei, le impepate eccetera; abbastanza spesso buone.
Poi c'è "l'altro pesce": quello che si gusta da ENSAMA, e che non ha nulla in comune con le grigliate, eccetera.
Una selezione quasi maniacale della materia prima di freschezza assoluta, un insieme di pochi ingredienti per ogni portata con sapori sempre nuovi, la perfetta gestione delle temperature spesso diverse all'interno dello stesso piatto, il cui aspetto è simile a un quadro, il tutto servito con attenzione e discrezione.
E poi una fila di portate tale da soddisfare qualunque appetito, con l'abbinamento di vini sempre corretto.
E poi c'è Sabino che più che chef e sommelier è un celebrante della sua cucina.
Forse è anche per questo che da tanti anni continuo a tornare.
