A great restaurant. Simple, unpretentious. Dishes made with real truffles were absolutely delicious.

Curiosity about trying Piedmontese boiled meat brought us to this trattoria. Everyone was satisfied.
The boiled meat was excellent; we tried the tagliolini with truffle, and the braised veal cheek was super tender and delicious.
I recommend trying it if you're in the area.

A small trattoria just steps from the square that doesn't look like much from the outside but is definitely worth discovering! Simple yet delicious dishes, truffles for those who enjoy them, good wines, and decadent desserts. The service is attentive, pleasant, and warm. A great find in Alba.

I had lunch with my wife on Saturday, February 7th. The welcome was friendly, the staff young and elegant, dressed in dark uniforms. The atmosphere was refined, yet with a mix of styles that couldn't be described as a typical Piedmontese trattoria. The ingredients were certainly high-quality, but I didn't experience the sensations I would have expected from a more traditional dish. The appetizer was very fresh raw meat, which didn't seem to have been hand-carved. The tongue in salsa verde was excellent. Two tajarin pasta dishes, served in a nice little pan, were generous portions, the second dish featuring a three-meat ragù and truffle shavings, and the quality was average. The Bonet con amaretto was very good. Two glasses of good-quality Nebbiolo. The price was average. I gave it three stars because I didn't feel immersed in the atmosphere of traditional Piedmont. I would like to point out that in a place that boasts the name "Trattoria del Bollito," this dish should be served from a trolley with the various cuts made fresh: this is the reason we ordered other dishes. The tables are too close together, and you eat elbow-to-elbow with other diners. I don't think I'll be back. It's a shame that only 5-star or one-star reviews are commented on. I believe that reviews that politely highlight areas for improvement should be acknowledged.
March 29, 2026. I see that today, after a long time, an offensive comment has been added to my review. It wasn't offensive at all, but it highlighted positive aspects of the place and aspects that, in my opinion, could be improved. It's unfortunate that at Trattoria del Bollito, constructive criticism isn't accepted
and that people react rudely....
