29/03/2025: Last night, with three friends, we decided to leave Livorno for Pontremoli, driven by the desire to taste the famous testaroli, a typical dish of this enchanting town. The Osteria della Bietola, a jewel set in a quiet side street, a few steps from the Piazza del Duomo, turned out to be a precious discovery. The atmosphere is typical and characteristic, but what struck us most was the service: two girls, one in the kitchen and one in the dining room, welcomed us with extraordinary kindness, making us feel at home. Their smiles and their welcome made our evening even more special. We started with the testaroli, which turned out to be a real delight: so much so that we had seconds! Next, we tasted the torta d'erbi and other local specialties, all prepared with care and quality ingredients. Being a member of Slow Food, I particularly appreciated the attention to tradition and the valorization of local products. The price, in harmony with the atmosphere and the quality of the flavors, made the evening a precious memory. In short, an improvised trip that turned into an unforgettable gastronomic discovery: the result is worth the effort!
