This is the place where I think you eat best in Rome!

I was really looking forward to this restaurant that sealed my visit to the city. The restaurant is beautiful, cozy and there is effective air conditioning, which is not something that is taken for granted in Rome in the summer... The kitchen is open, clean and runs quietly, the service is perfect, there is no other word, quick and friendly. They filled water and cleaned the table non-stop. The sommelier's recommendations were excellent, with a great selection of wines by the glass. We ordered a large number of dishes and shared them all. There were some great dishes, exactly in the style that I like the most and some dishes with some seasoning that I was not able to taste: First, smoked beef heart carpaccio with excellent pan tomato bread, roasted peppers with anchovies and capers, terrine of venison and tongue in a green sauce and pickled vegetables that was less interesting. The dish that pretty much ruined the experience for me was a stomach stew in a hunter's-style sauce. Something about the specific seasoning was shocking to my specific palate, even though the locals are probably used to the flavors of the local dish. For pasta, we had pasta with butter and fresh morel mushrooms, which was the highlight of the meal, simply divine. The pasta carbonara was less successful, the guanciale felt fried and crispy beyond what was needed, and gave the dish a less successful taste. For mains, there was a beef and veal dish, in a miso and yogurt sauce that was good, and a less successful dish of beef chunks wrapped in fat, in a pork-based sauce that I didn't like, and served with excellent green beans. Overall, the good dishes were truly divine, but the less good dishes were inedible to me and simply ruined the experience for me, even though it's clear that the raw ingredients are excellent and it's a matter of personal taste.

Absolutely loved Santo Palato. The food was outstanding, the service warm and attentive, and the atmosphere had a wonderful energy. Even the playlist was spot on. A truly memorable dining experience in Rome and one I would highly recommend.

I visited this restaurant for lunch on the recommendation of an Italian friend. I ordered the carbonara, and it had an authentic taste unlike anything I've had in Japan. I was so impressed, thinking, "So this is what real carbonara tastes like!" The flavor was delicious! However, it might be a little too rich and heavy for some Japanese palates. If you're visiting with a group, I recommend ordering several pasta dishes to share.

Delicious pasta, quick to serve, creamy butter, especially suited to Turkish tastes.
