Passing through Caluso for a medical appointment, we decided to treat ourselves to lunch at this very famous restaurant in the area. Despite our delay (we arrived at 2:15 PM), we were greeted with great kindness and escorted to the main dining room on the ground floor. The restaurant is beautiful, with a refined yet not overly formal atmosphere. There are several options for lunch. We opted for a classic menu and a gourmet menu. The amuse-bouche were very interesting, particularly the one with Bra sausage, ricotta, and a mulled wine reduction. We continued with two fantastic dishes. Fassona beef tartare, although simple, was delicious. One of the best I've ever had, the quality of the meat was top-notch. The gourmet menu, however, began with a free-range rooster plin, Nizza cardoon, and Passito: the best stuffed pasta I've had this year. Leek risotto was very good, creamy, and had balanced flavors. They offered us a change to the gourmet menu: duck instead of the grilled Fassona fillet. We accepted the change; I think I did the right thing. To finish, a zabaglione with Caluso passito, expertly whipped, and torcetti. A cheese tasting was included. All accompanied by two glasses of Nebbiolo. All the leavened pastries and similar were also noteworthy. The service was professional, but deliberately not too formal. We spent €50 each, including water, wine, and coffee. I will definitely be back.

The Gastronomic Experience
What is immediately striking is the cuisine's ability to avoid the shortcuts of the "already seen." The dishes were surprising and never banal, the product of research that isn't afraid to dare. Each course is a microcosm of new flavors, where local ingredients are elevated through simply perfect pairings, stimulating the palate with intelligent contrasts and profound harmonies.
