I had asked in advance if it was possible to prepare bagna cauda as an appetizer, even though it's off the menu, and they were true to their word. Not a strictly traditional version, but rather a reinterpretation by the chef, more elegant in its presentation and well-balanced in its flavors. An interesting proposal that maintains the character of the dish without being overbearing. For my second course, I chose the tender Fassona beef braised in Nebbiolo: very tender and carefully cooked; perhaps a little too salty for my personal taste, but still good quality. My wife and my cousin and her partner had agnolotti and tajarin, and everyone was very satisfied: fresh pasta, well-made, and portions were adequate. We also enjoyed the coffee served with biscuits, a small detail that's always a pleasure. The staff was very kind and helpful. The restaurant is rustic, with no tablecloths, but consistent with the informal and welcoming style of the osteria. A great place in Cuneo for those seeking Piedmontese cuisine with the chef's personal touch.
