A decidedly positive experience at Taverna all’Oca Bianca, with cuisine that maintains a strong connection to the region while also incorporating a few more ambitious twists.
I started with the "Flavors of Lunigiana" appetizer, where the fried zucchini flowers stood out: crispy, dry, and not at all greasy. A precise, clean frying that immediately reveals the chef's expertise.
Next up was pappardelle with duck ragù: delicious, with a well-constructed ragù, although I found the pasta a bit too "cracked"; personally, I prefer it firmer, with more bite.
The second course, however, is a completely different story: tartare of Piedmontese Fassona beef with burrata, foie gras, and truffle. A dish that isn't just good, but also lingers. The breakdown isn't an aesthetic quirk, but an invitation: first taste, then combine, then go back. The clean and elegant meat meets the roundness of the burrata, the depth of the foie gras, and the aroma of the truffle in a balance that feels surprisingly natural. It's one of those dishes where you pause for a moment, slow down, and realize you're eating something truly grounded. Truly remarkable, almost unbelievable.
The tiramisu concluded with a delicious one, although I felt it lacked that final spark that would make it memorable.
Overall, an experience I highly recommend. Solid, distinctive cuisine, and a main course that alone is worth the trip.
