Unmissable gastronomic experience.

So, let's start with a bang: the aperitif was a nice mix of tasty things, from the 'Pisan bubbles' that bring joy to that cube of focaccia with lamb, which was really tasty. The guinea fowl egg was delicate and the potato and cod croquette a classic revisited with panache. Moving on to the starters, the Easter millefeuille with local ricotta and artichokes was an embrace of tradition, while the seafood salad with chicory gave a nice boost of freshness. The first course, that lasagna gratin, intrigued me a lot with those courgette flowers and 'burnt' datterini tomatoes: a nice mix of flavours! And let's get to the piece de resistance, the rack of pork you chose! Well, I have to say you did really well! Double cooking made it super tender, and that demi-glace sauce was perfect. The dark potato was a treat and the pea soup with mint gave that touch of freshness that never hurts. A truly apt dish! To end on a sweet note, the Neapolitan pastiera with colomba ice cream was an original way to end the meal, a meeting between tradition and a breath of fresh air. In short, a menu that does not disappoint, with well-thought-out dishes that know how to whet the appetite. And that rack of pork of yours was the icing on the cake!"

I was there for a conference social dinner. The food quality was excellent as was the service. I would definitely recommend it.

Ristorante nel centro storico di Pisa la Pergoletta offre una cucina di mare tradizionale fatta con materia prima di buona qualità. Buoni i paccheri alla trabaccolara e l’orata al forno con verdure, servizio non troppo veloce ma professionale, prezzi nella media

Bellissimo locale in centro a Pisa, accoglienza splendida, personale cordiale gentilissimo. Frittelle di baccalà veramente imperdibili ! Misto di pesce, abbondante, freschissimo, ottimo ! Cappellacci, veramente unici ! Paccheri, ben rivisitati, molto buoni ! Spadellate di pesce, spettacolare ! Tortino al cioccolato , molto buona. Ottimo l’assortimento di vini. Avrei dato 5 pallini, ma vedersi presentare un conto di euro 214,40, non arrotondato almeno all’euro e’ veramente ridicolo seppur il rapporto qualità/prezzo si davvero ottimo ! Merita un pranzo, una cena e tornare !
