Excellent food, the kindness in the dining room is that something that immediately puts you at ease, the preparation of dishes, wines and cooking methods that makes the difference, sublime food, the raw fish better than a seafood place, the help with pairing with refined wine, it's worth going!

I came across this restaurant almost by chance for a business dinner, and the experience was truly excellent. The owner, besides being extremely kind, was very flexible in accommodating our request for an earlier time. The quality of the food and wines was truly fantastic, all in a pleasant and well-kept location. Highly recommended!

There are restaurants where you eat well. And then there are places like this, where every time you enjoy a unique experience that stays with you until you return.
For us, Franz's restaurant has been a favorite for many years, filled with flavors—always unique and different—that excite, sincere smiles, and attention that today seems to belong to another era. Here, you feel like a guest welcomed with affection, delicacy, and rare professionalism.
Their gratinated scallops have become our greatest indulgence: even during pregnancy, they were my happy thought.
And perhaps this is precisely Franz's secret: every dish not only nourishes, but creates memories. The chef's dishes are unique creations that constantly change and are almost unrepeatable, like snapshots of beauty and flavor, capable of surprising each time and remaining etched in the memory.
Choosing Franz for our baby's baptism was a natural choice, because we wanted a place that would make everyone feel loved, pampered, and at home. And so it was. Every detail was perfect, every course prepared with love, every gesture full of grace. Seeing the excited and surprised eyes of our guests was proof we'd chosen the right place. Even the orecchiette pasta first course won over my Apulian family!
A special thank you to all the staff: wonderful people, attentive, elegant in their manners, and incredibly knowledgeable. They handled even complex needs like celiac disease and food allergies with extraordinary care and meticulousness, making every guest feel at ease and important.
Franz continues to relentlessly fill our hearts, as well as our stomachs, and has now become part of our history.

Franz welcomes you into a setting that, despite its dated feel, won me over. The service is more than good and friendly. Unfortunately, however, when it comes to the food, I was decidedly disappointed: the "cold and hot" appetizer, the first half of which is very good and spot-on, while the second is bland and doesn't make the most of the fish used; the rice with scallops and Trevisana cheese is a simple, well-cooked risotto, but the scallop is missing and the Trevisana cheese is mixed with the Gruyere cheese—it's bland; the chitarrine are spot-on but nothing special, and the meagre, on the other hand, was well-cooked and paired well. These are the dishes I can speak about, and in the end, I enjoyed it, but the dishes didn't thrill me.

A delightful surprise upon returning from our holiday in Trentino. A very elegant restaurant, serving delicate cuisine based on fish and shellfish. The staff were very friendly and helpful. An address to keep in mind for enjoying a good meal in the small village of Formigliana.

"A perfect place to escape the rain." This is what I thought when a few days ago, on a gloomy day, I entered Franz's with my wife, my son, and our respective parents.
The consistently warm welcome from the dining room staff is something that puts you at ease; we've been to many restaurants, and that's not a given.
Then, even the first bite of what you taste is enough to "forget about the rain" and smile.
I don't have photos to show in this review, because photographing the dishes is depriving yourself of the experience; those dishes that are prepared with care, served with grace, and enjoyed with gratitude.
It wasn't the first time we've been to Franz's; in fact, we're now regulars at this wonderful place.
Why leave a review now, you might ask? Well, because every time feels like the first, yet it's better than the last. So I couldn't help but write this thought.
Do yourself a favor: go to Franz's!
I borrow a few words from Cesare Pavese: "A town means not being alone, knowing that in the people, in the plants, in the land there is something of yours, that even when you're not there, it remains waiting for you."
That town is Formigliana. And it is so because Franz is there.

For those who want to enjoy divine fish, there's a choice of top-quality raw and cooked fish.
The staff is attentive to every diner's need, and the owner is extremely knowledgeable in recommending dishes and wine pairings.
If one or more of your guests want meat, just let them know a few days in advance and the owner will make sure it's catered to!
What can I say? Truly exceptional!
The prices are in line with high expectations, not at all excessive.

Excellent in every way. It's hard to find restaurants that still amaze me, yet Franz was one of them.
Everything was truly delicious. With some dear friends, we tried the oysters and the mixed grill, and we were completely satisfied with everything.
The quality of the service undoubtedly makes the difference: the staff were extremely kind and knowledgeable.
I will definitely be back!
