Eh non ho resistito, anche se mi ero già abbuffata Al Spaceto, dopo tanto tempo, sono tornata da Gildo, anche per vedere se era cambiato qualcosa col cambio di proprietà. Non è cambiato ! Sempre al top per qualità (le melanzane e zucchine fritte qui sono le migliori al mondo per me) e simpatia!

In Trieste the buffet is a true institution with a Central European heart that does not and will never go out of fashion.
In a pleasantly informal environment you can enjoy real delicacies based on pork, but not only.
As regards "Buffet da Gildo", it began its activity in 1964 when Ermenegildo Valenta took over the management of an old Trieste tavern located in via Valdirivo 20 which from that moment was renamed with the name of the new owner.
In 2007 the transition to the next owners took place, with an offer always in the name of continuity between cooked and roast ham, porcini mushrooms, cotechino, sausages and typical dishes of the Trieste tradition.
In January 2025, two young entrepreneurs (husband and wife) took over the reins of the business and intelligently continued to work following the path traced by the previous ownership. Furnishings, gastronomic offers, staff; everything remains unchanged, drinks aside as new offers are added to the existing ones which include Italian and Belgian craft beers, which "for the record" I had the pleasure of tasting (the one I tasted was Italian) while savoring a succulent sandwich with “porzina” (pork) flavored with mustard sauce and kren (horseradish).
When you are in the city center in the middle of the morning and by chance find yourself in the vicinity of via Valdirivo, stopping at Gildo's to have a "rebechìn" (a Trieste term which derives from ribeccare, to eat another time) on the fly is almost a stop “obliged”. What else can I say... bon appetit and... prost!

Excellent traditional place and I also recommend it to tourists. It's not like once traditional places, obviously I won't mention which ones, which have lost their typical characteristics.

Top per il buffet al bancone tradizionale. Ha anche tavoli per pranzare seduti con menù dedicato.
Top le polpette, gli arancini e le fette di zucchina fritte ma soprattutto il mitico panino con prosciutto cotto, senape e cren.
Tipico buffet da lavoratori con servizio rapido e gentile.
Prezzo irrisorio.
